In the States for 100s of years, but me Mam made Finnan Haddie all the time smoked haddock poached in milk). Funny she never added the tatties & onions! But we did have "poor man's stew" which was the milk, butter, potatoes & onions. We ate kippers for brekkie with fried potatoes

Thanks, Cheryl... I was home last June and went up to Cullen for a wee visit fae ma hame toon o Huntly. We didna hae Skink, but the girls (6 and 2) and ma wife enjoyed some local ice cream instead. I'll be making this when the temperature drops doon here in Oz.

I love Cullen Skink (not surprising as my surname is Cullen), so I will have to give this recipe a try. We have a Sear and Stew slow cooker which has an aluminium bowl which goes on the hob, then into the slow cooker. Saves having to use another pan to brown things then tip them in, so should be able to sweat down the leek and onion then add everything else.

Unfortunately smoked haddock is really difficult to find here in Sweden where I live, so either I’ll need to make this with smoked salmon mixed with fresh haddock or just wait until I can visit wonderful Scotland again 😊

I love all seafood fish. I take it this smoked fish could withstand the 4 hrs of cooking and infuses the broth well. Do you recommend any other fish if smoked isnt avaiable? Im not a crock pot user so Ill check out the other version

I got out the smoker again last weekend and among the things I smoked was a 10 pound slab each of salmon and cod. I used a blend of mostly oak with a bit of mesquite wood. The fish turned out great after only 40 minutes (coolest part of the indirect smoker). Just the right amount of 💨. Probably the cod would work well in this dish. I’ve lived inScotland and eaten this dish. Currently in north Texas. 👍

Cool! My family is English/Scottish the farther you go back, the more North they are. I lose the trail in 1538 and they were in Berwick on Tweed. Sometimes English, sometimes Scottish depending on which war. I think it's Southern Scott Land. To go further back I'd have to hire a UK genealogist. Lol

So I had a Google: The second element skink is a Scots word for a shin, knuckle or hough of beef which has developed the secondary meaning of a soup, especially one made from these. The word skink is ultimately derived from Middle Dutch schenke "shin, hough". Personally I cannot see a connection :-).

James there is a lot of similarities between Scots and Dutch, especially lower-saxon dialects like it is used in Groningen, Drenthe and Frisian used in Friesland. In history there was a huge connection between scotland and the northern netherlands. A lot of trading was going on. and mercienaries from scotland being stationed in northern netherlands and vice versa lower saxons stationed in scotland. a lot of intermarrying was going on between northern dutchies and scots. The north seea was never considered to be an obstacle or boundry but rather as a highway. A lot of families in the northern provinces have roots in scotland and a lot of scottish families, especially in the lowlands have roots in the netherlands. A lot of scots vocabulary is the same as lower-saxon vocabulary. altho written a bit differentely. but phonetically identical. in the 16th 17th and 18th century a lot of scottish youngsters from the upperclass went to the netherlands to study science and law because that was where all the important universities were that Scotland was lacking during that time. In Rotterdam alone there were more than 5000 scots living there which was about 5 to 10% of the total city population. they even had their own scottish church. During the religious persecutions in scotland thousands and thousands fled from scotland to the northern provinces. landing in the harbours of Delfzijl, Lauwersoog, and the Frisian harbours. Im Dutch but my family arived in the Netherlands in the early 1600s and came from the Dumfries area and Strathclyde The name has been saxonised/Dutchonised. Im Dutch and my husband is Scots. He doesnt speak dutch. When i talk dutch to him it all sounds like bleeb-blab-bloob to him. but when i speak Drents he says it sounds much more farmiliar to him. He doesnt understand it but he says he picks up lots of words here and there and he kinda gets what topic im speaking about. I speak English with a thick Dutch/nether-saxon accent ..... and most scottish people think I sound like someone from Orkney or the Shetlands. I immediately knew skink is the same as Schenk/schenke. in neather-saxon pronounced as skenk. Dutch word for shin = scheen (pronounced with the hard g/ch and ee as ay like in bay and hay. In neather-saxon its Skeen pronounced exactely the same as in english or scots Not sure how this evolved in a fish dish tho :) The dish might originally be made with skink but out of lack of meat they might have done it with fish but kept calling it cullen skink

Before I retired the UK company I worked for had three factories in The Netherlands and Belgium and in my technical engineering capacity I visited the Dutch one in Halfweg many times and understand your husbands difficulty. On one such trip I was in the Bar of my Hotel and it seemed like the entire Bar was trying to teach me how to say a Dutch Phrase. I think it meant 88 heaters, but the reason for the tutorial was that the letters "ch" ocurred three times in the phrase and were pronounced three different ways. I have tried to learn some Dutch and have a very few words. My favour one is "misschein". I googled to get the correct spelling.

i had to laugh when you said you had some PLAIN bread on the table. i think you were meaning white bread as opposed to the brown roll on the plate... You can buy a small Emson indoor smoker for smoking the Cod or Haddock.......................Works great.

A lot of trading was going on. and mercienaries from scotland being stationed in northern netherlands and vice versa lower saxons stationed in scotland. a lot of intermarrying was going on between northern dutchies and scots. The north seea was never considered to be an obstacle or boundry but rather as a highway. A lot of families in the northern provinces have roots in scotland and a lot of scottish families, especially in the lowlands have roots in the netherlands. A lot of scots vocabulary is the same as lower-saxon vocabulary. altho written a bit differentely. but phonetically identical. in the 16th 17th and 18th century a lot of scottish youngsters from the upperclass went to the netherlands to study science and law because that was where all the important universities were that Scotland was lacking during that time. In Rotterdam alone there were more than 5000 scots living there which was about 5 to 10% of the total city population. they even had their own scottish church.
During the religious persecutions in scotland thousands and thousands fled from scotland to the northern provinces. landing in the harbours of Delfzijl, Lauwersoog, and the Frisian harbours. Im Dutch but my family arived in the Netherlands in the early 1600s and came from the Dumfries area and Strathclyde The name has been saxonised/Dutchonised. Im Dutch and my husband is Scots. He doesnt speak dutch. When i talk dutch to him it all sounds like bleeb-blab-bloob to him. but when i speak Drents he says it sounds much more farmiliar to him. He doesnt understand it but he says he picks up lots of words here and there and he kinda gets what topic im speaking about.
I speak English with a thick Dutch/nether-saxon accent ..... and most scottish people think I sound like someone from Orkney or the Shetlands.
I immediately knew skink is the same as Schenk/schenke. in neather-saxon pronounced as skenk. Dutch word for shin = scheen (pronounced with the hard g/ch and ee as ay like in bay and hay. In neather-saxon its Skeen pronounced exactely the same as in english or scots
Not sure how this evolved in a fish dish tho :) The dish might originally be made with skink but out of lack of meat they might have done it with fish but kept calling it cullen skink

Before I retired the UK company I worked for had three factories in The Netherlands and Belgium and in my technical engineering capacity I visited the Dutch one in Halfweg many times and understand your husbands difficulty. On one such trip I was in the Bar of my Hotel and it seemed like the entire Bar was trying to teach me how to say a Dutch Phrase. I think it meant 88 heaters, but the reason for the tutorial was that the letters "ch" ocurred three times in the phrase and were pronounced three different ways. I have tried to learn some Dutch and have a very few words. My favour one is "misschein". I googled to get the correct spelling.

BUT my mind went back to when we had PANorPLAIN bread. i dont know if you can still get plain bread, and all the bread you buy nowadays was/is called pan bread
