  • Hey guys :)
Welcome back to What's for tea, and here's the eighth instalment of my festive food & drink ideas :)
Today I'm making good old cock-a-leekie soup! I always make a soup as an option on Christmas day....and this year, I think it'll be cock-a-leekie (chicken & leek)
It's really easy to make, can be made well in advance, freezes really well and quite cheap to make :)
Prunes can also be added to your bowl when serving....we don't like prunes, so I've not included them in this recipe :)
I've listed everything I used below Thanks for popping over.
See you soon guys, take care x
    ______________________________________________________________________________________
    I Used-
A whole fresh free range chicken (About 2 lbs)
8 Fresh leeks (chut into chunks)
200g White long grain rice (washed)
    3 Medium carrots (peeled & shredded/grated)
1 Teaspoon each of thyme & rosemary
OPTIONAL- 3-4 potatoes (peeled, washed & cut into chunks)
    Salt & Pepper to taste

It's such a nice wee soup :) But make sure to add plenty of salt and pepper....this soup has a very mild flavour. I recommend using chicken stock (from a cube) instead of just water to cover the chicken...because you get tons more flavour. But as I wanted to keep this recipe super 'authentic' I just used water :) x

It was made famous in the UK in the 80's by a Knor stock cube television advert lol....it's always served as a starter for a Burns supper (January the 25th) to celebrate the life and works of the Scottish poet Robert Burns. But also very popular at new year & Christmas :) x

Whoo-Hooo! Cock-a-Leekie Soup! I hear about it on British tv series; there was Hilda Rumpole in Rumpole of the Bailey bringing home a tin of it from Tesco...we’re watching Rosemary and Thyme mysteries right now with Felicity Kendall and Pam FerrisHow’s that for synchronicity?! Now I know it’s a promising version of homemade chicken soup. That sounds very good here in Minnesota now, with night temperatures double digits below zero. Must make this!

Hello. I've watched your video for this soup which looks so delicious. I have one question....how would it be with a small pasta, such as orzo. I love rice but cannot stand rice in soup.....perhaps as a result of having too much chicken soup made with rice (portuguese canja). If you can give me your opinion I'd be most grateful.

Christmas day dinner is just my son and I and we always have his favourite starter of cheesy garlic bread with salad, turkey and all the trimmings for main and whatever takes his fancy for dessert. (He gets to pick it all) Hope you have a very merry cristmas.

We don't like prunes, and I certainly wouldn't like prunes in my savoury soup...but to each his own as they say :) Grilled bacon is also sometimes added too. I just stopped by to watch this version of cock-a-leekie. Chef John added the prunes to his stick and strained them out.
