    I have been waiting for a recipe like this! I spent a month in Vietnam a few years ago and stuffed my face with everything in sight, but have been missing so much since I went vegan. Love both you and Mary!

    I followed the recipe for the seitan and added some Chinese five spice to the ziploc bag when I put it into the fridge overnight, then used it to make Chow Mein. My whole family loved it, my husband who is an omnivore said it was as good as when I used to make it with pork. Thank you so much for this recipe.

    This seitan is the best I have ever had. It's so easy to make and delicious. And buying the mushroom broth powder changed my life, it is such a great item to have in the pantry.

    These were phenomenal! I followed your recipe with only minor substitutions, including the pickles (I added a splash of black vinegar to the brine). I made a cashew spread to go with it. I can't get banh mi bread where I live, so I made that too. Thanks for the excellent post. Next on my list is Mary's char siu bao :)

    This recipe did not disappoint! I have never made my seitan that way before, and it ended up so good! Plus, I was able to make a whole tray of broth from left over, so I can use it again :D Thanks so much for sharing this!!! Super tasty!

    The best video I've seen on making Seitan....woot! I can only buy lemongrass in tiny packages that are not Top Quality (sometimes the tiny stalks are mushy or moldy on the underside)...I have powdered lemongrass and can usually figure the proportions for recipes. I really love this video, and learned a hella lot!

      +Judith Loue glad its helpful!!! Yeah I’ve seen those herb packages and avoid them if I can haha. Check the frozen section of your closest Asian/indian grocer because you’ll probably be able to find the frozen chopped/shredded lemongrass easier than the fresh stuff

      I have lemongrass powder on hand...it takes a while to figure proportions from "fresh to powder" but it works just fine, for me...thanks for the reply

    This recipe is really unique! Thank you for de-mystifying prepping fresh lemongrass -- I never bought it because I didn't know what to do except use chunks to flavor broth. I'm so happy! (I'm gonna pop some fresh cilantro and basil in those sammies!) Cheers!

    I tried the Ban Mi sandwiches a couple time at Loving Hut Tempe Arizona, they tasted delicious! Plus I bought some the vegan jerky there and taste excellent too.😋👌

    I made Seitan for the first time on Friday. I wasn't really impressed by the recipe I used, but I was a little surprised that it was fairly easy. I will have to give this recipe a try. It looks amazing!

    Thank you! I made a very inexact version of this today. It made a delicious sandwich! Replaced the lemongrass with lime leaf. 🤷‍♀️I have what I have in my pantry.

    Omg this is such a game changer! I'm not vegan, but I don't eat pork anymore and most other meats gross me out! The last time I had banh mi was 1.5 years ago, and I know this because my favorite banh mi shop is right across my work and I stare longingly at it all the time. Will definitely be giving this recipe a try!

    "The Ordeal of Seitan" sounds like a book title, speaking of ; ) This recipe is so tantalizing and you explain what you're attempting to achieve so thoroughly, that it's a must try; luckily, we are going back to daytime temps like July next week hereabouts, so these sammies will go down perfectly.       So!! I used the seitan (not for banh mi bc it's difficult to get lemongrass in germany) and it was probably the best seitan i've ever made!! this will definitely be my go to recipe from now on!!

    I love you and Mary! :-) I have seen many many people make seitan and cook it the moment they are done mixing it! It needs some time for the flavor to get into every granule. I bought mushroom broth powder!! I am sick today and this past week with a sinus infection so my caregiver and I made a great big pot of soup and used the mushroom powder broth and it is Umami Central! Love love love it. :-)

    I am utterly fascinated with wheat gluten. Unfortunately, I am also gluten intolerant LOL so I live vicariously through these recipe videos lol. Sometimes people make "wheat meat" and it just looks like bread bits, but this looks legit.

      Rebelwheels NYC you either have celiac disease or you don't. There's no such thing as an intolerance a sensitivity or an allergy when it comes to gluten. If you don't have celiac disease and it really does do something to your body to eat gluten then please seek out a gastroenterologist. :-) Elizabeth MD PhD nutrition science

      My husband has celiac's, so I've really struggled with ways to make gluten free "fake meat", so he can enjoy these delicious recipes, too, and one of the best things I've found is a recipe Happy Herbivore has on her blog for gluten free seitan chicken. I've made it several times, now, with different seasonings, and it turns out beautifully! Here's a link to the recipe, which is delicious, in and of itself, too! happyherbivore.com/2014/03/gluten-free-seitan-recipe/ I'm sure, with Lisa's seasonings, it'll be just as yummy as the wheat meat version ;)

    OH MY! I LOVE this recipe! Can the seitan be frozen? Would love to make multiple batches since the broth is ready and freeze the seitan for later. Also, I did freeze my leftover broth and used it in a variety of recipes that called for broth. It is the BEST BROTH I've had to date!!! Thank you!

    I think marmite tastes a little funky but also beefy. It is wonderful on a toasted English muffin with a little bit of vegan butter and a very very thin small amount of marmite.

    pro tip: make yo own mushroom powder by blending/grinding dried shiitake mushrooms!

    I'm really looking forward to trying this on a day off. After 10 trips to Vietnam... next time I want to see some vegan Bahn Mi in Vietnam. Maybe I'll buy a food cart and try selling these in Saigon. lol But yeah they would definitely sell in NYC where I live right now.

I've been trying to get a really good beef taste and chicken taste without that strange gluten undertaste, if you know what I mean.

    I love lemongrass, question.
    You said that pulverized lemongrass is good for a year. Can you store it in your pantry or does it need to be refrigerated?
    If you can store it in the pantry, can you do so as is, or do you have to dry it out first? Like in a dehydrator...

    Another question, you mentioned lemongrass tofu. It's one of my favorite dishes at Saigon Bay. Viet restaurant where I live. Do you know if that dish is like accidentally vegan? I never really looked into it.

      Sorry I must have forgotten to mention it, I store it in the freezer and I usually use it up within the year. The only thing that would make it not vegan is fish sauce, so double check with the restaurant to see if they use it, if not you're probably in the clear!

      Soy Sauce, good point.
      I meant I doubt I could ask, meaning the dish is premade. But thinking about it, it's made fresh to order. Pho is probably what would be premade in the restaurant. At least the broth.
      Besides soy sauce what's a good vegan replacement for fish sauce. Considering the funky, pungent flavor? Soy sauce just isn't the same.
      Closest thing I found was the brine from fermented tofu...

    Whenever I make seitan I always wrap it tightly in foil so that it doesn't become misshapen in the liquid. Just make sure that you don't boil it that it's a gentle simmer. Now you just said that so people are going to slap me because I told you to do something you already said you were going to do! Talk shit huh? LOL Lisa I have been making seitan for about close to 20 years and that seitan looks absolutely gorgeous! I must make it comma, comma, soon. Have a great day! :-)

      Yeah! Baking it does sort of set that shape without having to use foil or parchment paper, so i kind of like it this way for that reason.

      Yes! They might be a little difficult to eat, but if you can eat soy, lemongrass tofu in this banh mi is BOMB. :)

    I see it in so many vegan videos. What's with all the tamari? For gf it makes sense but in a seitan recipe? I don't understand

      A lot of soy sauces tend to vary in flavour because the ratio/fermenting process of wheat to soy can vary, so I like using tamari in because 1. I can buy it in bulk in glass bottles, and 2. The flavour is more consistent.

      Unfortunately the key ingredient in seitan is gluten. You could use lemongrass tofu instead :)
