Polish pickle soup! Yes! I heard about this last summer (promptly forgot about it) and was going to try and veganize (sp?)it. I think you might be the first vegan chef to make this. All of these soups will be added to my winter menu. Unfortunately where I am, it’s still in the upper 80s! Ugh! And if you want to do a whole slew of Eastern European recipes in the future, I’m down for it! I love those hearty meals from that area and they are normally budget friendly. Great vid!
I made the dill pickle soup. It's delicious. I'm eating it right now! I would highly recommend. I made croutons out of rye bread. I sprayed them with olive oil, garlic powder and onion granules. Air fried them for 10 minutes. They're perfect with this soup. I'd never had tried this in a million years but I trust you Candice and you did not let me down! Thanks

And to be honest I have not ever heard of pickle soup b4 until you introduced it lol. I was kind of afraid to make it lol like hesitant thinking that I might not like it but then a part of me reminded me ”hey don’t knock it til you try it” lol and I was curious anyways so I decided to try it 😬 lol and yes it was a shock to my taste buds. And well because I have not ever tasted anything like that b4 and was so good. I put this in my favorite soup category to make again and again 😁

I agree soup needs garlic ... wait, I make an "Irish" soup from onions, leek, potatoes and greens like spinach, Swiss chard, kale and parsley. Delicious, but no garlic in that one. Saute sliced onion (1 medium) in a generous amount of veg. oil until translucent, add sliced leek (1-3 leeks depending on size) and sauté slowly on low heat for a little while longer. Use a lid as much as possible and just stir sometimes. Add sliced potatoes (3 big) and do the same until the slices break fairly easily if you try to cut them with a spoon. Add about 1-1.5 liters of water or veg. stock (just add enough to cover the vegetables, it'll be fine). Bring to a boil and let simmer under a lid until the potatoes are completely cooked. Add like two handfuls of green leaves of your choice and cook until wilted. Blend. Bring to a boil, add more water/stock if you think the soup is too thick and add salt and pepper according to taste. The original recipe used butter and suggested grated cheddar as a topping, but even before I went vegan I would use vegetable oil and feel no need for cheese. (We were broke). Serve with a nice bread.
For the pickle soup, in Lithuania we also would put barley in it. Obviously we never put coconut milk, I'm assuming it's a substitute for sour cream, because a dallop would go in at the end, when you serve it.

Pickle juice is delicious 😋 I used to drink too much of it like 2oz 😬 until my niece told me I’m going to get high blood pressure and told me to read the ingredients and I was like whaaaat? 😮 lol so I toned it down

To me we are in a recession. LOTS of ppl and some professionals are saying that. The economy is not matching what the majority of US gets paid. And doesn’t help to raise the minimum wage because soon as they raise the minimum way everything else goes up.. the rent utility internet cost of phones and so on
