Meatballs flavored with smoke.. A Technique That We Invented That You Will Fall In Love! 🤤

- Welcome to another delicious recipe! This video is your go-to for creating Turkish ''Islama'' meatballs that have the rich, smoky flavor of wood fire cooking, using your regular BBQ. You'll learn the secrets to infusing that signature smoke taste at home and making meatballs that are a hit at any gathering. If you're up for making something special that tastes like it's straight from a wood fire, you're in the right place. Let’s start cooking!
For the meatballs;
500g double ground beef
1 small onion, grated
4 slices of stale bread, without crust
1 glass of water
½ teaspoon cumin
½ teaspoon black pepper
½ teaspoon cayenne powder
1 teaspoon salt
1 handful of cherry stems
For the sauce;
Half a liter of beef stock
2 heaped tablespoon cayenne pepper
4 tablespoons of butter
Salt, 1 teaspoon, 15 g
To serve;
Stale bread slices
4 green peppers, roast
2 tomatoes, cut in half and roast
1 large onion, cut in quarters and roast
2 heads garlic
Add the grated onion to the grounded meat. Soak the stale bread with water, squeeze the water and add it to the minced meat.
Add cumin, black pepper, red pepper powder, salt and knead them for at least 10 minutes. Let the mixture rest in the refrigerator for about 15-20 minutes.
Give the shape to the cold meatball mixture.
Heat the cast iron well. Place oak or cherry chips, if available, or dried cherry stems in the food processor, and grind them.
Put the any kind of chips or stems to the well heated cast iron pan, place onions, garlics
Place the oven rack on the pan to heat, put the shaped meatballs on the grill and close a lid so that the taste of embers is transferred to the meatballs. After 4-5 minutes, turn them and close the lid again.
For the sauce, melt the butter in a saucepan. Add red pepper powder and roast them. Pour half a liter of beef stock and salt. Boil it over low heat for 10-15 minutes.
Dip the bread slices into the sauce and put them on the grill.
While serving, place one slice of sauced bread on the plate, meatballs on it, roasted peppers, tomatoes and onions on the side.

If you are lucky enough to have fruit trees apple cherry ect... when you prune your trees keep the cut pieces I use alder that grows in back yard I peel the bark of to get rid of the bitter taste dry the young stalks look at the resources you have around you I'm in Northern Interior of BC Canada love your recipes the different spices I'm now getting to know keep up the great job looking forward to more great food

Did you make some vegetarian kofte for Bahar? In México there's the 'torta ahogada' ... it's a sandwich 'drowned' in tomato sauce. They're often served with a very spicy chili arbol salsa with sliced white onion. I eat 4 of them (with carnitas) each week! Thanks for the video - they're always fun to watch!

Refika in Cape Town we have a traditional recipe where we use a little brass bowl with sand and a few red coals (incense cubes perfect) and we put the wood chips on like whole incense. Also if you don't have oak or grape vine trimmings, then black tea leaves is perfect for smoking. We then bury this bowl half-way into the kofta mixture in a wide bowl (we say frikkedel mixture) and then close with a damp cloth. This way the cool smoke penetrates slowly and give a fine flavour to the meat. Taste after an half hour to test, longer is also good. Also if the chips or tea are slightly damp they smoke well and last longer. Then use the smoky, savoury meat for kofta of any shape or size and easy to cook inside.

u guys should get a place where u can bbq... so many good turkish food comes from a real fire.. but i get a place is very expensive in istanbul.. not much room at all! Maybe build a indoor kitchen bbq... they have one at my local turkish restaurant..

Its "mild" paprika but i recommend you use your own blend of sweet and hot paprika according your tase
