Hi Refika, my wife and I have been watching your channel for a while now and loving it. I've always said that you'd be great on TV and have just been catching up with Masterchef on the BBC. Wow there you are! Fantastic to see that you're going places and I hope you'll all have your own BBC show soon. CONGRATULATIONS! and love to you and your very professional and fun crew!
@@katherineguidry2638 I'm from the Netherlands and Dutch recipes also use tablespoons but tablespoons are not an exact measurement like in the US. Dutch authors mean a usual dinner/soup spoon full when they say eetlepel (literally: eating spoon).

Hi from Tennessee USA. Fantastic video. Looks absolutely delicious. Definitely going to make that. Thanks so much for sharing you recipe and your time with us.
What a unique, interesting and delicious looking recipe! When you cut into that huge meatball and the juicy eggplant said hello, 😍‼️ I enjoy your videos so much. Thank-you Refika and Team.
My mom was born and raised in Istanbul, although not Turkish. The one dish she never found here in NY is Tavukgöğsü. The original style with chicken. She’s 84 and I would love to make it for her. Have you made a video for this recipe?
I've met some Far Eastern people not finding Turkish Cuisine tasty, complaining almost every dish containing tomato, and every time salad with olive oil and lemon juice or vinegar being served with the meal. To those people who doesn't like tomato and Turkish salad and dressing, I have good news. Tomato is a good source of phenolic compounds (phenolic acids and flavonoids), carotenoids (lycopene, α, and β carotene), vitamins (ascorbic acid and vitamin A) and glycoalkaloids (tomatine). In short, anti-aging and the rest. Olive oil, I think almost everyone aware its health benefits. Lemon or Vinegar is anti diabetic. Metabolism saver.
I look forward to watching you every Saturday. Recently, I have been seeing you on short reels. Thanks for the tip on the air fryer. Now I am on the hunt for one without teflon. Keep up the great work.❤
The best decision I've made in my life is moving to the biggest city in my country for uni. I made so many diverse friends, including some Saudi girls who introduced me to Saudi and Turkish food. I'm glad to have found your channel several years ago, so I could recreate some of my favourite flavours
Those vege scraps you can put as they are on your gardens. Start in one part and just spread it along each day. Put next to last lot nxt time. I watch alot of Turkish mountain village cooking. They have chooks etc. Banana skins are fantastic for plants. It's potassium.
Me, too! I get most of traditional Turkish or farmhouse cooking dishes from ' Country Life vlog ' 'Wilderness Cooking' Last time, I made homemade ' sucuk ' No nitrates, all natural.
I love eggplant so much! This looks so delicious!!!! I so enjoy and love your videos! I hope to one day in the next few years come to Turkey and experience your culture.
In the USA, most ovens do not have fans. If they do they are convection ovens with settings for bake or roast but no control to adjust the fan speed high or low. I’m sure there are some like those in Europe but I imagine they’re very expensive.
Yum! I make a stuffed eggplant dish that has roasted garlic, cilantro, smoked paprika inside the eggplant. I bet it would also be delicious here. These are beautiful. ❤
I fell in love with aubergines many, many years ago when I had them stuffed in Spain and in those days we didn't get them in UK. You have given me a recipe to give me that taste again so Thank You dearest Refika. You stole the show on Masterchef ❤❤ In Cyprus one time I had preserved lemon tree blossom petals and they were divine have you ever heard of this recipe?. Love to all the team ❤❤❤👋👋👵🏴
Thank you for sharing alternatives for using onions in the kofta. While I love onions, they don't love me back. I look forward to making this recipe when my eggplants are ready to harvest.
@@Refika I will, that is a promise. You have improved my quality of life with this one simple tip. I can use this knowledge about onion replacements for other recipes to enjoy kofta, kebabs, and similar food again. Thank you 🥰
That's a very interesting combination of flavors. I would like to see how to use Za'atar and/or is there an equivalent Turkish herbal blend and what to use it on.

Refika did not taste her pear kebab, why? I love her dancing the lacucaracha! In the Philippines, we cook a similar dish, ground pork w onion on grilled flattened eggplant!
This will work perfectly with Japanese Eggplant (Nishi) also - even cutting them in half (because longer) and those Nishi do not have to be pealed, just poke the skin to let air out, when baking first... Nishi is also far much thinner, so beware of much shorter cooking time...
