How simple is this? This turkey soup is wonderful, yet flavorful. This dish is beautiful and packed full of vegetables. If you are looking to make a bowl of turkey soup, this is the perfect recipe to try out. Serve it with some crusty bread for an easy satisfying lunch or dinner.
Ingredients:
2 carrots
2 stalks celery
2 potatoes
1 zucchini
Generously parsley leaves
1 sweet yellow onion
2 cloves garlic
1 tablespoon of olive oil
1 lb {454 grams} ground turkey
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano
240ml {1 cup} of coconut milk
960ml {4 cups} of chicken stock
1/2 teaspoon of salt
1/2 teaspoon of black pepper
90 grams of baby spinach leaves
Grated parmesan cheese {for garnish}
