- This creamy lazy chicken recipe is just a few basic ingredients and very simple to make, with a deliciously creamy sauce packed with parmesan is absolutely divine. Enjoyed over the pasta or with simply mashed potatoes to dig in for the perfect meal!
Ingredients for Chicken Rub:
6 tablespoons all-purpose flour
1/2 teaspoon onion powder
1 teaspoon smoked paprika
Black pepper & salt to taste
1.60lb boneless chicken thighs
1 tablespoon of olive oil
1 tablespoon of unsalted butter
Ingredients for Mashed Potatoes:
5 yellow golden potatoes
1/4 cup of milk
1/4 cup grated parmesan cheese
Garlic powder to taste
2 stalk of scallions {spring onion}
Ingredients for Creamy sauce:
3 cloves garlic
1/2 cup plus 1 tablespoon oil package sun-dried tomatoes
1 cup of chicken stock
1 1/2 cups heavy whipping cream or heavy cream
Spinach leaves
1/2 cup grated parmesan cheese
Salt and pepper to taste
1/2 teaspoon Dijon mustard
Generously chopped parsley leaves
Note: if sun-dried tomatoes aren't your things, then you can substitute them for fresh one.
Stored in the refrigerator in an airtight container leftover chicken will last up to 3 days!
