    The other bottle is Padek. It is ground preserved fish sauce. You can google "pantai ground preserved fish sauce" to get better picture of the bottle I used if you want to go look for it at the Asian market.

    Larb is a traditional Lao dish as it was invented in the country Laos by the Lao people. Many neighboring countries in Southeast Asia were influenced by Laos, a country with an amazing culinary history. Larb is the national dish of Laos.

    If you drive through Fremont, there's restaurant called "Green Champa." I've never been there, but they get pretty good reviews on Yelp. Lots of the reviews mention larb.

    Hi Nana, where can I find Padek in California. I've searched all over the Asian grocery stores and couldn't find the Laos Padek. Thank you.

      D Nguyen if you can't find the same brand of padek I used you can use other brands. I always find it at local Thai, Lao, Hmong markets. They also have it at 99 Ranch and Lions.

    sa bai dee, i have a question.. im having a lil party next saturday and its a lil party for my son. To make this dish and lets say i invited 20 ppl will 1 whole chicken be enough for my half alluminum pan tray (taad) not the full one.

      1 whole chicken doesn't make a lot, but if you add in all the herbs (depending on how much herbs you want), it should be enough for a small tray.

      tamara petterson padek is fermented fish sauce. Shrimp paste is kapi.

      I do not own a rice grinder or nor do I have a grinder. I use whatever I have in the kitchen that can crush them roasted rice bits.

    My grandma used to make us a Lao dessert with green noodles and sweet, white liquids. She is very sick and can no longer make it, from what I can remember i believe it is called "nam wan" correct me if I'm wrong.. but I was wondering if you could show how to make that.

    This is one of my favorite dishes unfortunately I could never get the measurements correct for the ingredients. Never enough for taste, But I know how it suppose to taste. Lol!!

    sa BAi DEE nana :) I plan to make this for my birthday next weekend and I was wondering when you grilled your meat did you season it with anything? how long and what temp did you bake it on ?

      I don't season the meat. just broil until it's thoroughly cooked and still a little juicy. My oven on has high and low for broiling. I use high.

      Cicimee Thanks for the comment. Right now, I try to do English first since that is what more people understand. Then go back when to add Lao when there's time.

    Hi thanks for sharing. I am traveling thru San Jose CA. Your video made me hungery, so I went looking for Larb. No such thing as Lao resturant but found larb at Thai resturant. So I got it. So disappionted !!!! Nasty Nasty!!!!! Yuck !!! They need to just subscribe to you !!!! I have tried most of your dishes and just loved it. I am going to have to make larb when I get home or will never get the nastiness out of mouth.

    "nam wan" is generic name for liquid desserts. I think want you mean is "nam wan khao lod song." I had lots of requests for this, but I haven't had time to make it yet. You can check out my "Cooking with Nana: Khao Leng Feun" video at 11:50 minutes to see how the noodle shape is made.

    I have the unchopped kaffir lime leaves in my "nam khao" video around the 3 min.10 sec. mark. You have to slice them yourself. The don't come chopped like that. The kaffir lime leaf looks like two regular lime leaves attached to each other.

    I'd prefer free range chicken! and believe it or NOT, MSG isn't bad for you! For a long time it was consider a bad flavoring additive...new studies says, NOT TRUE!
