- In this video, I show how to make raw and cooked beef salad, plus a soup of beef organs (offal) to eat with it.
The raw one contains beef bile. I referred to it as "bitter sauce" in the video. A few people have asked what it is and where to get it. You can usually find it in Southeast Asian (Lao, Thai, Cambodian, Vietnamese, Filipino) and some Latino/Hispanic markets. It is either fresh or frozen. Go to the meat department and ask if they have it.

Luca See I usually use the Pantai padek. For the bile, I don't know what brand. Whatever is available at the store. The bile is usually frozen.

if you have time to make yourself it will be better because you can control how dark it is. next best is the homemade powder that someone drops off to sell at the market. they also have mass market kind, but that is last choice.

Caroline Nguyen we also have to be careful because there's also another kind of "betel leaves" that people use for chewing with tobacco. What kind of Jeow Padek are you asking about? The one you dip with rice? or for sour fruit?
Yes that is true. But what you have in your soup is also called "Betel Leaves" in English "La Lot" in Vietnamese... Oh and the Jeow Padek that I was asking for is the one that you dip with sticky rice. Can you please make a video of it. Thank you so much Nana

Lena Saeng you can use any brand of padek (fermented fish sauce) that you prefer. Just make sure it’s not the padek that they brewed for papaya salad.

my family's add cooked liver and even hearts too, my mom is from ban-nongsa, wat phu champasak so that's true Laos cooking there....your cooking is exactly like my sister, she can't cook without MSG and she'll be like "ken ma tha por tha ma, bor hen see thi"! Lol

The bitter sauces, can you tell me the name of the bottle or how it looks like? I like to find it at the Asian store.
Most stores don't sell it, but some South East Asian stores might. Ask For cow "bile" typically used for Lao cooking if required.

Larb or Lahp is the national dish of Laos, which is where this dish originated. Larb or Lahp is one of my favorite Lao food.

I''m Thai and It's not "Larb", it's pronounced LAP, pronouncication is the same for Thai and Laos, not sure why it's not spelled correctly. Restaurants spelled it Larb, so people pronounced it like it's spelled which is wrong.
Yes, it has been spelled 'larb' since the 1990's when the dish was introduced to Americans through Thai restaurants. The popular Thai Romanization system back then use the -r to make the vowel sound longer. For example, the Thai name "Porn" (พร) pronounced "pawn" and is nothing about adult materials. Should we tell Porn to spell her name the "correct" American way, or the Lao way, which is "Phone?" 😉
Back then people pronounced it correctly as "la-ab" because the servers and chefs actually told people how to pronounce it. Nowadays, people's first exposure to "larb" is social media where there aren't anyone to tell them how to pronounce it correctly. So, they just pronounce it the "American" way and the servers don't want to correct their customers.

That's weird so the R is silent, R is never silent in English, so no restaurants changed the spelling so Americans can pronounced it correctly and just kept it as larb Lol. When I first went to Thai restaurant as a kid, I asked the waitress if she has laab, she said yes its in the menu, I said I don't see it, she pointed at Larb, I said no not that one I meant I want laab, she yes thats laab, I was so confused Lol. I didn't believe her, she said trust me it's laab, the dish arrived and I was like omg it is laab LOL. I thought that restaurant owner couldn't spell but turned they all spelled that way n they got Americans calling our precious dish larb Lol
@@Khon-Lao-Thai It's closer to how the French pronounce the -r after vowels. Listen to how a French person pronounces "parfait." The French pronunciation of "larb" is also closer to Lao and Thai.
