C/w Nana: Lao Caramelized Pork Stew (ຕົ້ມເຄັມໝູ == Tohm Khem Moo)

  • Tohm Khem is a stew made with caramelized meat. In this video I show how to make it using pork, but you can use any meat you want.
    This dish came from China as "five spice stew." Every country in the area has there own variation. The Thai call it 'pah lo' (พะโล้).

    This recipe is legit! and better than my moms 😅
    Here’s the measurements in case anyone else needs it.
    6 cloves garlic
    1 whole ginger
    1/2 tsp salt
    1/2 cup sugar
    1/4 cup maggi
    1/4 cup soy sauce
    1 tbsp fish sauce
    4 cups water

    Looking forward to making this, i only got to eat this dish when I went to the bahn boun or wat when I was younger, it's been a little over a decade since I've had this. My mom never made it at home, maybe she didn't know how, but when I go visit, I'll definately make this for her and show her that I do have Laos cooking skills, thank you!!!!

    Sabaidee Mae pah around 3:34-3:37 minutes in your video caught my attention towards stirring the pot something dark and close to black on one of the meat. I was hoping nothing was written on the meat itself!!I love u nana!! Thank you for everything!! ❤️

      You're welcome! Just remember that most of my recipes yield a lot, so if you are not cooking for a lot of people, you will need to scale down the amount of each ingredient. Have fun!

    That's a great looking caramelized pork, Nana. Looks just like my mom's (minus the ginger). I'm curious if it would be too much trouble to ask for you to list the ingredients in the detail box (below your video where it says "Show More"?     Here in the Philippines we have similar style of cooking called "Adobo" it differs from one region to another region. One version of adobo is cooking pork or chicken or combination into a stew w/ garlic, ginger, soy sauce, vinegar, brown sugar, pepper corn & leaves, water w/ hard boiled quail's egg (MSG is also optional). The garlic is first toasted in small amount of oil then the meat is stir fried until brown then other ingredients are added except the vinegar & the eggs then let it cook in low heat until the liquid sauce bubbles into a boil for 15 mins then add the eggs & vinegar last then let it boil again for another 15 mins.

    This is my favorite food, this is how my mom does it too. It's comfort food for us especially now it's cold weather. One time we made with quail eggs too. And it lasts a few days in the fridge if you don't want to cook during the week.

      Chris Batta I make a variation of this in my instant pot! Use the meat/stew setting and adjust the pressure to high. Add all the spices and seasoning with water after you caramelize your sugar in your IP. For pork belly i set the time for 45-50 mins (sealing) and it is very tender. Definitely cut the time in half for chicken. After venting, add the eggs for 5 mins to get some color. Good luck :)

    Nana, I live in Bay Area. Do you know where I can buy SOM PHA (picketed mud carp fillet). I can't find in ranch 99. They usually come int the package. I used to buy it in Florida.

    How did you get your eggs peeled perfectly like that? I consider myself a pretty good cook but I cannot seem to hard boil a perfect egg!! Help me!! :-/

      Tum V After boiling the eggs, remove the eggs and shock them with cold water. Let the eggs cool down to room temp before peeling but don't let them get too cold.

    Is black soy sauce the same as dark soy sauce?

      Peter Sour Black soy sauce is thicker and sweeter than dark soy sauce. Here is the brand of black soy sauce I used. www.thaifoodandtravel.com/ingredients/soyblack.html

      Peter Sour you have to cut the tip with a knife. Then you have to find your own way to cover it when not in use. I just use plastic wrap to cover it.
