Bailey's Chocolate Irish Cream Cake

- I dare you to make this. Everyone will want seconds of this dessert. Please see description for full recipe.
Ingredients:
Chocolate Cake:
3/4 cup (85g) unsweetened cocoa powder
3/4 cup boiling hot water
Mix this together first and allow to cool
2 cups (414g) sugar
2 cups (260g) all purpose flour
2 teaspoons baking soda (NOT baking powder!)
1 teaspoon coarse salt or 1/2 teaspoon table salt
Mix these ingredients and set aside
Take your cooled down chocolate water and add:
1 cup vegetable oil
1/2 cup Bailey's Irish Cream
2 eggs
3/4 cup milk or buttermilk (either is fine)
1 teaspoon vanilla extract
Mix this together till combined
Add your flour mixtures into this liquid mixture a little at a time
When all the flour is in... mix for 2 minutes.
Pour into greased pan and bake at 300F
My glass pan took 53 minutes.
A metal aluminum pan should take 40 to 45 minutes.
Bake till toothpick comes out clean when testing cake.
Just before cake comes out of oven, do this:
Put 3/4 cup chocolate chips into bowl.
Put 1 can (7.6oz) of Crema Media, 2 Tablespoons sugar and 1/2 cup Baileys Irish Cream into another bowl.
Heat up the Bailey's mixture and add to the chocolate chips to melt the chips.
Have ready and hot for the hot cake to come out of the oven.
Poke holes into hot cake, then add your hot chocolate mixture to soak into the cake.
Refrigerate cake after cooling some.
Next Day:
Make your chocolate whipped cream
2 cups heavy cream
1 and 1/2 teaspoons vanilla extract
1/4 cup unsweetened cocoa powder
3/4 cup powdered sugar
Mix to make a chocolate whipped cream and spread onto the cold cake.
This usually takes 2 to 3 minutes with the mixer on high.
Top with cocoa powder
The original recipe used chocolate chips on the top as the final topping... I used cocoa powder.
The original recipe used 1 cup of sweetened condensed milk and no sugar.... I used the Crema Media with the 2 Tbsp of sugar as a substitute.
Those are the changes I made to the cake, and this cake came out excellent.

3/4 cup powdered sugar (85 grams)
Mix to make a chocolate whipped cream and spread onto the cold cake.
This usually takes 2 to 3 minutes with the mixer on high.
Top with cocoa powder
The original recipe used chocolate chips on the top as the final topping... I used cocoa powder.

Michael, I'm not a baker (admittedly), only making the occasional brownies here and there. This is really inspiring me to finally get that Kitchen-Aid and make this. I do not make desserts very often, this one is worth it though. This is a recipe I saw on Facebook, but you never know about internet recipes. It called for Sweetened Condensed Milk, but I used the Table Cream with just a bit of sugar added to it. I think it was a good call. Thank you So much Mara! I hope you make this one!

Michael, that is one sweet treat that sure will have us thinking twice about skipping "dessert". It reminds me of something we used to make years ago but it was a brownie. Hi Alicia! One time that I made this, I took individual servings in styrofoam containers to people at work. They all raved over it and I received some backlash from people that did not get any. I believe I saw this on Facebook a long time ago and I had to try it. I've made it several times and the only thing I have to say is... you must make this! You could also add some shaved chocolate on top or decorate/dust the top with cocoa powder for more impact. Feel free to make a video Alicia, it might do well as it has for me.

This looks absolutely delicious. Poking holes in the cake reminded me of the maraschino chocolate cake my mother used to make every year on my birthday (by request). Her recipe called for poking holes in the cake and adding the frosting while the cake was still hot. It gave the frosting an unusual texture. Another nice thing about your cake is its flexibility. If you wanted a change of pace, I bet you could give a nod to tiramisu and use marsala.

Hi, just curious as you made this and followed the instructions in the description, did it definitely cook at 300f? I have a gas oven, and all the conversions say that 300f is gas mark 2, and that just seems too low. How did it turn out? Thanks ☺️

I did not add the sweetened condensed milk, I used Crema Media. Crema Media is not sweet. The answer is no to your question!

You can use 1 cup of the thick Sweetened Condensed Milk, without adding the 2 Tablespoons sugar. Eagle is a brand of the Sweetened Condensed Milk. I put this information into the description of the video with other helps and hints. All of my video recipes have some information in the descriptions!

I understand the too hot thing to bake. I strive to save electricity, keeping my thermostat at 78. Then at some point, I get tired of saving and set it to 75. I started that this week (at times) meaning when I make a casserole or bake. I am the same way in winter, keeping the thermostat at 67 to save.. Then in February, I am tired of being cold all the time and set it to 70. My highest bill is always February. Ok... nevermind... Thank you so much for watching Jeanette!

I semi-failed at this. The mousse on top was ALL liquid, didn’t want to set for some reason but it came out really good anyway! I’ll try again next time :D

Cake is very moist. Sank in the middle a little but quite yummy. It took more than 45mins for baking in my electric oven btw :)

You can make your own Irish cream. Recipes online. Use cheaper Irish whiskey because you're adding all that other stuff.
Cake came out ok. Read the recipe first! I put baking powder instead of baking soda aaaargh

This is a must try! The Seafood Lasagna is too, but this is dessert. I made this a couple years ago and took it to work. It was gone in ten minutes. Hopefully when you make it, it will last longer :-)
