I am type 2 Diabetic and have made significant progress in the past 18 months since diagnosed with an A1c of 19.3 going from heavily medicated to no meds at all and achieving normal blood sugars for the past 9 months. Not easy to change at 50 years old but people like The Vegan Cyclist and Cycling Maven, are doing an excellent job at sharing their lifestyle without shaming and you should be commended for that. Thank's for a great video again ! Don't care much about sound quality, the message was loud and clear and that is what is important.

Yeah Scott Jurek is vegan and Sage Canaday is a lifelong vegetarian and vegan-ish, plus a bunch of others, but guys like Jornet, Thevenard, D'Haene & basically most of the absolute best aren't. They seem to be more in the "don't really give a s..t about what I eat" category! Not a knock on veganism by any means, though. Thanks again, looking forward to more videos like these.
Rich Roll is an ultraman triathlete too, not an ultra runner but I think the plant based lifestyle is not a hindrance , these athletes are showing you can still do well and excel with plants. I think plant based gives better health and recovery but ultimately comes down to genetics and drugs to be the best of the best.

The USDA nutrition database could be helpful in determining the composition of your food and your nutrition. Oh yeah, per calorie it has more protein, but not per gram. Big difference since 100g of broccoli is only 34kcal and 100g of beef is 190kcal. So, that means beef is 5.5x more energy dense than broccoli. To get the 26g of protein that beef would give you from broccoli you'd have to eat about 1000g of broccoli, which is a lot haha. As far as different protein types that I don't know. The way your body absorbs protein will change depending on what vitamins, minerals, etc are in the food - You would need to consult a dietitian to answer that as it is very complicated stuff!
But really, its a moot point anyway because we are talking about things that only make up a small part of a person diet, which is (and should be) highly complex so as to cover all of the body's need. Lots of veggies and a wide variety of everything else is best!
I'm sure it's relative, and difficult to do a direct comparison. we have p/1/2 races, which are like upper level amateur, and we also have p/1 races, which are essentially national level pro races. Is your elite level like a continental pro, or still categorized as amateur?
Lizzie Armitstead is the perfect example that a vegan rider can be the best rider, at least she has proven that in the women's peloton.. In the men's peloton I haven't heard of any successful vegan yet.. someone tried and couldn't handle it..... can't remember who was that guy..... still I think is to much work to go Vegan but from an ethical point of view. chapeau .. wanted to note that broccoli has vegetal protein not animal protein and that is why a lot of people still think that you need to eat meat..

As someone who doesn't eat meat and haven't for 45 years I always find it strange having to explain to people why I only eat pulses, veg etc, as though I am some how weird, imagine if it was the other way round and you were trying to explain why you like to eat meat when few did, how would you describe what you were eating and why you liked to eat meat, would you say it is because I don't think, I don't care, I like eating other living creatures it tastes nice, at least I don't have to say that time and time again?
