    My cousin would make the best chocolate fudge. She made some for my Mom and when Mom brought it home, the side of the box said "Male". We were confused for a moment until we realized it was the box that had nuts added. 🤣🤣🤣 Not sure if that is a common practice amongst fudge creators, but it made us giggle that day.

    I've been making fudge like this for years, it was on an Eagle Brand sweetened condensed milk can. I normally use sweetened condensed for it and I've never thought to microwave the chocolate before... but I certainly agree that the Ghirardelli chocolate chips are always the tastiest and I usually use them for the holiday special fudges.😋👌

      Be very careful about microwaving chocolate. It can get crunchy crispy or dried out or... Wellll, something goes wrong...if you don't take it out and stir the melting hot parts around to distribute heat every ten seconds or so.
      I didn't know that because I never had to do it when I was heating chocolate in a double boiler on the rangetop so soon. I thought 45 seconds or one minute would do but...alas and alack, it did something else! I ruined some fine chocolate that day ... it actually got burnt!

      I always melt mine in the microwave too but, be warned, it doesn't change shape so, the only way you'll know it has actually melted is by stirring. Most people make the mistake of thinking it will look melted when its ready and end up burning it. If you microwave in short bursts and stir each time it's a great method.

      I do it on the stove, and yes eagle brand had the recipe over 20 yrs ago..lol. I don't nuke chocolate it can burn to easily

      My mom made it too but she dropped it into small lumps so it was easier to pack for mailing and serve on Christmas treat trays at parties- she always took people something when she went and even the nurses at her doctors office got some treats lol. Good memories💕🎄 🎅🌟

    I make this every year! It's the best tasting fudge. Any other just had a grainy texture. You can also easily use this as a truffle filling too.

    Some alternative flavors that I'm quite fond of: 1) Substitute white chocolate and orange extract. Mix in green tea powder. 2) Substitute dark chocolate and orange extract. Mix in dried cranberries. 3) Substitute white chocolate. Mix in powdered ginger and chopped up candied ginger. Pour over a layer of crumbled gingersnap cookies.

    My mom used to make fudge that used a can on pinto beans of all things. It had less sugar, more protein and fewer calories that traditional fudge but still tasted so good and unless you told people it was made with beans they never guessed.

      Personally I prefer the mattress ads or the ads that are more obviously unrelated to the content of a channel, because that makes it much more clear that it's an ad. Even if she outright states it's an ad in this video, it starts to feel a little blurry. I watch youtube to get away from the intense commercials of television and hearing her cite taglines for chocolate chips while cooking with them in a whole video dedicated to them feels off. Just one big commercial.

    I've been making this fudge for 40 years. It is easier than any other candy. To be honest, I never add salt. I usually add pecans, walnuts, or black walnuts. You can also add a tablespoon of plain cocoa if you want a more grainy texture like regular fudge. It gets better the longer it stays in the fridge.

    My husband has been making fudge like this since before I even met him (we've been married 13 years). It's really good! I prefer nothing on top of mine. I like just the texture of the fudge. Adding another texture would be weird. Personally.

    Ive been making 3 ingredient fudge for years. The only difference is my recipe is done totally in the microwave. A really handy trick is to go to the dollar store. They sell small square holiday gift boxes. I usually get the ones that are 4x4 or 5x5 and about an inch or so tall. I line them with parchment and portion the hot fudge directly into them. Almost instant gifts, already wrapped and ready to go

    This is the recipe I have been making for years! I would double the recipe and put it in my 9X13 plan, lined with parchment paper. I would trim off the ends, as they were rounded due to my pan. Those would be the snacking pieces for me, my husband and son. They started called them fudge butts. I would cut them, put them in mini cupcake liners and put them in small boxes-8 pieces to a box. They made excellent gifts!

    I make fudge like this for Christmas.
    I still love the cooked fudge but when you're exhausted and have chronic pain, this version is much easier.
    I sometimes add in a handful Andes mints or York peppermint patties then top with chopped mint M & M's.
    Or I just sprinkle on some chopped peppermint candy canes, pecans, walnuts, peanuts or hazelnuts.
    I make a peanut butter 'fudge' as well.
    I sometimes cut a square of plain fudge and peanut butter fudge and eat them together.
    I could never choose which was my favorite marriage of flavors.
    Mint/Chocolate or peanut butter/ chocolate.

    Ghirardelli makes the BEST brownie mix on the planet (in my opinion of course, but I think you'd agree if you have ever had them before 😅)! I highly recommend them! It's the "triple chocolate" version. They're really great for lazy people 😁

      @@CC-cr3hk Yes! They're super gooey and chocolatey. They definitely have a similar consistency to fudge, especially if you bake it for the minimum amount of time 😅! I cannot recommend them more, especially if you've tried other brands and haven't found any good ones. Every time I try any other brownie I think about how much by the Ghirardelli ones are. Honestly, they make all other brownies taste like dirt😂. And make sure that you get the "triple chocolate" one. I mean, I'm sure the other ones are good as well I've just only ever had the "triple chocolate" ones before 😅😁

    Wow. This sounds great to make! It reminds me of Alton Brown’s peanut butter fudge recipe. Peanut butter and butter melted together in microwave and then mix it with confectioner’s sugar. Let sit.

    Emmy needs to check out O'Connels chocolate here in Ireland. Basically like a coffee shop specialising in hot chocolate and chocolate treats. I'm no chocolate expert, but I think it's impressive. I have no idea if flying it in the mail will keep it from spoiling though. Like if its in a warm post office sorting room for too long. Hmmm.

    I made a batch of this topped with mini chocolate chips and a sprinkle of sea salt and brought it with me to my family’s Thanksgiving dinner and it was a hit! Everyone loved it and it really was super easy to make.

    My mother used to make this type of fudge, then pack it into open, metal, holiday cookie cutters. Once they set, she'd put each one in a fancy cellophane bag, tie the top with some curly ribbon, then tuck in some tiny bit of decoration (an evergreen sprig, a snowflake cutout, a tiny silver bell, etc). Later after Mom was no longer with us, I started making them myself. They were the *cutest* little "extra gifts" or party favors, and always a big hit :)

    Hi Emmy! Your videos have comforted and brought joy to me for years. Im a type 1 diabetic, and I was wondering if you ever considered doing more ketogenic or low carb recipes. I’m sure your type 1 diabetic fans or other people on low carb diets would be interested to see you explore some of those. In my 24 years of having to eat low carb foods, I’ve tried a ton of different alternative recipes. Some were amazing, but many of them haven’t been so good. I believe there are a few good low carb recipes for fudge. Ive been trying to find a good one to make for Christmas.

      You can substitute sugar in most recipes for 1.3x the weight of the sugar as erythritol (and you can also add a small amount of stevia in too.)
      Look at recipes like this and see if you can make homemade versions of the high-sugar ingredients - you can make a condensed milk substitute with milk powder very easily and with erythritol you can make it diabetic-friendly.
      Xylose is supposed to be the gold standard for sugar substitutes, although it's only low carbs and not _no_ carb, because it has the same flavor profile and it caramelizes and does all the other things you'd expect from sugar without any weird flavors or unusual quirks.

      @@jessl1934 thank you so much for taking the time to write this out. I do have a bag of Swerve lying around. I think swerve is eurethritol, with works very well. I’ve never heard of using powdered milk for condensed milk! What an awesome tip!
      I’ve also never heard of xylose before. Is that newer ?

    This is a great fudge recipe and so easy. I use semi-sweet chips though, bittersweet is too much for me. I used to make cookies called fudge puddles which are basically peanut butter cookies baked in a ball and then you press an indentation in them with your thumb or the end of a wooden spoon as soon as they come out of the over. Fill with this fudge (before it's set) and let cool. Delicious!

    I did it!!! It came out great! Thank you for this blessed recipe and making me believe I can do it!! I love you. I HAYE BAKING AND COOKING everything I make does turn out delicious but the dishes the time and how fast it’s gone plus me not enjoying it a very rare thing.     I'm not American, so I'm not sure, by condensed milk do you mean the sweetened one? If yes, then that's almost the recipe I use to make chocolate to cover my cakes. I just don't add vanilla or salt. Just the bittersweet chocolate and the sweetened condensed milk. I add milk until it's a consistency I like and then pour it over the cake while it's still hot and pourable!

      Yes. In America it's usually marketed as "sweetened condensed milk" to differentiate with the similar "evaporated milk."

      @@emmymade Oh, don't worry, it's ok! I just asked because I've been confused before, English isn't my first language and in Greece "condensed" milk is used interchangeably with "evaporated" milk to refer to the same unsweetened milk, so it was helpful to know what's customary there. :)

      @@chloe_the_cat2831 so I just did it with half evaporated milk and it becomes more of a "no flour chocolate cake" texture & less of a fudge texture, so I think the difference definitely matters! It's good that you asked because evaporated milk is typically more runny and of course less sweet. It's still super yummy and I think if I wanted it completely solid and fudgy I'd definitely use only condensed milk next time. Condensed milk almost always has sugar so if you want it less sweet I'd use baking chocolate chips with high cacao content and no sugar added which may help to control for sugar levels! Super good.

    You can do this non dairy, with non dairy chocolate chips and coconut condensed milk. Make it all the time.

      @@therealJamieJoy she makes dark orange, peppermint, raspberry, coffee, black Forrest (cuts up gummy raspberry lollies and mixers them through), mocha, and the flavours are a special oils for doing it, thanks for asking, hope that helps

    I would advise melting butter into your sweetened condensed milk in the microwave. It adds a nice flavor (everything's better with butter) and putting the condensed milk in the microwave at 30 second intervals carmalizes it just a tad which adds another nice flavor!

    Ohhh my favorite chocolate EVER!!! One bite of fudge a year is enough for me. Fudge sick is for sure a thing and one had to have a super duper sweet tooth to be able to eat more than one tiny square at a time lol. Still a great gift that will last a long while.

    That is a wonderful and so simple recipe and the good thing is I have all the ingredients in my pantry! I always have a bag of Ghirardelli 60% Cacao Bittersweet Chocolate Premium Baking Chips on hand for those chocolate cravings!

    I've been making this fudge for years! I usually use Nestle's milk chocolate chips when they prefer milk chocolate. Easy peasy and always comes out delicious! So many people use evaporated milk and marshmallows but this tastes so much better! For holidays, I use those hard icing cake decorations on top, like santas, Christmas trees, etc, holiday m&ms make them look festive too!

    Nice mustache! Thanks Emmy! Have you tried the fudge recipe that is 1 16 oz. jar of peanut butter and 1 16 oz. container of frosting. You melt them both in the microwave and combine them. I made it using cookie butter instead of peanut butter. Yum!

    I've been making the "Eagle Brand" fudge off the can for years. It is soo good, super easy, and never gritty! Using Ghirardelli chips just ups the decadence. Yum. So easy to add other ingredients. Nuts, candies, a dash of red chile powder, whatever. My favorite is pinon nut fudge. A New Mexico treat!

    I've been making fudge like this for a few years now. I like to flavor mine, by adding different extracts in place of the vanilla. Examples: Mint, Raspberry, and Orange. Play around with the amount, depending on how strong of a flavor you want.

    I made this fudge the night before my 18th birthday snd took it to school to hand out to my friends as then work. Only difference was the recipe I was using was meant to be chocolate fudge with a layer of another fudge on top. I think it was supposed to be peanut butter but I might be wrong. Well I didn’t feel like doing all the hassle to later it so I threw the Reece’s PB chips in when I was melting the chocolate snd figured I’d get some kind of swirled effect. They didn’t melt as fast so I ended up with chocolate peanut butter chip fudge. It was delicious.

    okay, when they say it's a simple recipe, usually it turns out to be not so simple, but this is something I can actually make even in my teeny-tiny kitchen corner in my teeny-tiny apartment, I'd swap out the condensed dairy milk for condensed coconut milk and the chips for store-brand dark chocolate bars though. And it's really something you can make on a budget as well

    I was really spoiled growing up where I did, we have a lot of Chocolatiers in my hometown. Amazing chocolate was the standard when I was a kid...but, I have to hand it to Ghirardelli....for a mass produced chocolate, they're pretty amazing too! I made this, Emmy is right, it's freakin' GREAT!! and not the PITA that some fudge recipes can be :D Happy New Year Emmy-Crew!

    🤤🤤 This brings me back to when I would always get fudge at Pier 39, Santa Cruz Beach Boardwalk, or the wharf in Monterey Bay 😍 I don't know why I was drawn more to the fudge than the salt water taffy at those locations (oh duhhh, chocolate!).. ahhh nostalgia...     My grandma made this fudge every Christmas on her budget and gave this out every year. It was a tradition but so sweet you have to be young to eat alot of it....also made her famous Cherry Bounce...."hic"..

    My mom made her fudge this exact way! He used rum extract sometime instead of vanilla and folded in the walnuts. It wasn't overly sweet and gritty the way fudge often is....just so delicious.
