    140 g (3/5 cup) heavy cream
    15 g (1 tablespoon) unsalted butter
    20 g (2 tablespoons) granulated sugar
    3 gems
    30 g (3 tablespoons) wheat flour
    5g (1/2 tbsp) cornstarch
    2 c. lemon juice soup
    3 egg whites + 45 g (4 tablespoons) granulated sugar
    preheated oven, 390 ℉ (200 ℃), 12 minutes then 230 ℉ (110 ℃), 50 minutes
