How to make Baked coconut Sweet Rice Cake (焗椰汁年糕) for Chinese New Year - simple and easy recipe

- Hello everyone, Chinese New Year 🧧 is coming very soon, I would like to show you guys how to make this easy and simple sweet rice cake recipe called Baked Coconut Sweet Rice Cake. This cake tastes very crispy on the outside and soft and chewy on the inside. The best thing about it is you don’t need to steam or pan-fry like the traditional sweet Rice cake. Just eat it hot or in room temperature.
Ingredients
Glutinous rice flour 1 lb (16 oz)
Baking powder 1 tsp
Coconut milk 1 can (13.5 oz or 400 ml)
Milk 1 cup (8 oz or 250 ml)
sugar 1 cup (200 g)
Unsalted butter 4 oz (113.39 g)
3 large Eggs
Dried coconuts
Olive oil
Tools: 3 aluminum trays (8.5" x 6" x 1.5") or One 8" round cake pan
Instructions
1, Combine Glutinous rice flour, Baking powder, Coconut milk, Milk, and melted unsalted butter. Mix well together.
2. Add in the eggs and sugar and mix well together.
3. Grease the baking pan with oil
4. Pour the batter into the pan to 3/4 full cause it will rise when baking.
5. Sprinkle some dried coconut on top
6. Bake it in the pre-heated oven at 350 degrees F for 45 mins until golden brown color.

What's the size of the baking pan?
200 grams of sugar, would it be too sweet?

I used 3 aluminum trays (8.5" x 6" x 1.5") but you can use One 8" round cake pan. In terms of 200g sugar, it’s not too sweet for me 😄but you can use less to adjust the sweetness. I hope you enjoy it 😊

Can you substitute the milk with soy milk? Or use more coconut milk? We have milk allergy.

Same time 45 minutes or until it turns golden color 😊
Can I use vegetable oil if I don't have unsalted butter?
Yes, but use 3 oz of vegetable oil instead of 4 oz as substitute for butter.

what if my oven only goes up to 250 degree??
250 degree? Is it Fahrenheit or Celsius temperature? For my recipe, it’s 250 degrees Fahrenheit
