However, is there something else you could recommend to replace red bean paste? As I speak, I am trying a batch of nian gao using nutella and wish I had found this recipe first, as I had all the ingredients, booooo!!! (I'll have to let you know how it turns out since red bean paste is hard to come by for many people but Nutella can be found easily). I hope it's not a disaster, lol. =)

I am currently using a vitamin blender, it's a good quality and high power blender and has different settings for different uses. I've stuck with it for a while but you should definitely do some research since there are many brands out there. Good luck!
It doesn't convert to cups exactly, I would stick with the grams for this recipe so that the ratios don't get effected too much. Also, you can find measurement conversions on the internet:)
In weight, it's just over a pound--1 pound, 1.6 ounces, more or less. You can find one-pound bags of glutinous rice flour in most Asian grocery stores. If you use one pound, you need to reduce your other ingredients a little bit. I came up with: One pound of glutinous rice flour One cup sugar (200g.) 90 grams coconut oil (about 6 1/3 Tablespoons--butter or margarine will do in a pinch) 3 eggs About 2 1/3 cups of coconut milk (585ml--Chaokoh brand is my favorite) 1 tsp. Baking powder Pinch salt 1/3 cup shredded coconut I hope this helps! :)

Glutinous rice flour is not available where I live. Can it be made with ordinary rice flour?
I don't think it would work with ordinary rice flour, glutinous rice flour is needed to achieve the stretchy texture of a rice cake.
Do you live near any Asian groceries? You can order it from H Mart online. They have good prices and low shipping costs.
Is the glutinous rice flour three elephant brand with green borders?
I use that one all the time. Never steered me wrong. :) Mochiko is another good one.
