Chinese chefs use baking soda to tenderize chicken. They say it gives the bonesless chicken a velvety texture. Honestly I have tried it but the baking soda kind of contaminate the flavor of the meat. Thats why I dont treat the chicken in any way for chinese stir fried dishes. BTW new recipe video on GARAM MASALA is now live. Do check it out.
I wont recommend it. The meat gets a little tough when its exposed to salt for prolonged period of time. I would recommend you defrost the frozen meat in a brine solution

I have a couple of questions. In 1 kg of mince or boti how much peepli, kebab chini and katcheri powder? What is remedy for frozen meat of eid to make kebabs. Because I lost 2 kg beef mince in angeethi as the kebabms didn't stick.
peepli..... half tsp.......same for kebab cheeni...... if using both reduce by half. I personally dont use kachri for tenderization, I use it for the taste....it has a tangy taste.... so if you you are using for taste add 1tsp if for tendering use double that. Defrost frozen meat very very slowly........ take the frozen meat and place it in the fridge for 24 hrs...... your goal is to defrost is slowly........ this way to lose least amount of myglobin...... also dont discard the red liquid......add it back to the qeema.

Yes but not too much...... also rinse well after brine. remember baking soda dont taste so good. this technique is mostly used in chinese cooking where they add a lot of heavy spices to mask the baking soda harshness. I wont recommend using it in plain recipes.

Janab Bahut Umda explanation, humne pehli martaba seekh kabab banane ki koshish kari, 500 gm mutton ke sookhe keeme mein lagbhag 65 gm gurde ki charbi istemal kari, 2 pyaz Ko pees ke uske paani ko nichod ke milaya, ek mashoor kabab wale ne pas bataya tha ki charbi 10% hi honi chahiye varna, seekh pe kabab toot jayega aur dhuan bhi zyada niklega. Hume laga ki charbi 15% ke lagbhag ho gayi hai to binding mein thoda bhuna besan bacha piya bhune maide ke sath. Kabab ka swad to behtareen aaya par seekh pe kabab shrink Bahut kar gaye aur aur kuch beech mein se 2 tukde ho gaye aur kuch ek sholon pe gir bhi gaye. Kya binding thodi aur badhani chahiye thi? Ek janab ne farmaya ki anda mila lete to kabab acha bind hota aur seekh pe tootate nahin?
Dekhain jab meat pakta hai tow uska shrink hona inevitable hai. ghosht hai shrink to hoga. Iska best solution to mein use kerta hoon woh hai fresh bread crumbs. Jab meat pakta hai tow shrink hokar water release kerta hai. yeh water bread crumb absorb ker se phul jata hai tow kebab kam shrink hotay hain. qeemay mein aap atleast 15% fat use kerain. I have recently made beef boti barBQ . I used 1.5 kg meat in which I added 5 tbsp vinegar and 1 packet of Shan BarBQ masala , 4 tbsp yogurt . That barBQ was not juicy and tasty. It was a little dry and flaming on the tongue. Is that flaming because of vinegar?
Shufkat Ali shan spice mixes are are usually very strong. Maybe thats the reason. As for the juicy part if your marinate includes raw payapa which is present in the spice mix packet then this papaya can render the meat dry if cooked to long

Kabab Cheeni is mainly grown in Bihar region of India. Though in foreign countries you find it by name of All spices is from Jamaica are of Low Quality.
There are 3 method of tenderising not 2 . The third method is called Thermal tenderising, wherein meat is cooked in Handi/deg on low heat for longer period,this is used in Nihari and Shab degh cooking , Dum cooking is also thermal tenderisation.

can we add baking soda in the brine water?
Yes but not too much...... also rinse well after brine. remember baking soda dont taste so good. this technique is mostly used in chinese cooking where they add a lot of heavy spices to mask the baking soda harshness. I wont recommend using it in plain recipes.

I think papaya is better then kachri bcz papaya easily digest the heavy meal like kbab

Janab Bahut Umda explanation, humne pehli martaba seekh kabab banane ki koshish kari, 500 gm mutton ke sookhe keeme mein lagbhag 65 gm gurde ki charbi istemal kari, 2 pyaz Ko pees ke uske paani ko nichod ke milaya, ek mashoor kabab wale ne pas bataya tha ki charbi 10% hi honi chahiye varna, seekh pe kabab toot jayega aur dhuan bhi zyada niklega. Hume laga ki charbi 15% ke lagbhag ho gayi hai to binding mein thoda bhuna besan bacha piya bhune maide ke sath. Kabab ka swad to behtareen aaya par seekh pe kabab shrink Bahut kar gaye aur aur kuch beech mein se 2 tukde ho gaye aur kuch ek sholon pe gir bhi gaye. Kya binding thodi aur badhani chahiye thi? Ek janab ne farmaya ki anda mila lete to kabab acha bind hota aur seekh pe tootate nahin?
Dekhain jab meat pakta hai tow uska shrink hona inevitable hai. ghosht hai shrink to hoga. Iska best solution to mein use kerta hoon woh hai fresh bread crumbs. Jab meat pakta hai tow shrink hokar water release kerta hai. yeh water bread crumb absorb ker se phul jata hai tow kebab kam shrink hotay hain. qeemay mein aap atleast 15% fat use kerain. I have recently made beef boti barBQ . I used 1.5 kg meat in which I added 5 tbsp vinegar and 1 packet of Shan BarBQ masala , 4 tbsp yogurt . That barBQ was not juicy and tasty. It was a little dry and flaming on the tongue. Is that flaming because of vinegar?
Shufkat Ali shan spice mixes are are usually very strong. Maybe thats the reason. As for the juicy part if your marinate includes raw payapa which is present in the spice mix packet then this papaya can render the meat dry if cooked to long

There are 3 method of tenderising not 2 .
The third method is called Thermal tenderising, wherein meat is cooked in Handi/deg on low heat for longer period,this is used in Nihari and Shab degh cooking , Dum cooking is also thermal tenderisation.
