    1. No ghee
    2. No turmeric
    3. No store bought fried onion
    4. Make fried onion paste
    5. Use khatai powder if sour yogurt not available
    6. Dont overcook
    7. Mix of 70% Short rib meat and 30% thigh meat recommended for mutton or beef. Remove scales if using fish
    8. Use garam masala including jaifal and jawitri
    9. Use fresh green masala like green chillies, coriander and mint in sindhi and hydrabadi biryani
    10. Add kewra water after cooking the qorma
    11. Use ample water to boil rice
    12. Use ample salt
    13. Use garam masala in rice water
    14. Pour qorma oil on top most layer of rice to avoid drying up
    15. Wait for steam to get absorbed after dum to retain aroma

      Al noor Supreme basmati rice. green color ki bori hoti hai . this for basmati rice. agar sella use kerna hai tow I personally use ponam supreme sella. sella apko imtiaz se milay ga. basmati araam se water pump se mil jayega. pehlay 1 kilo use kerain. samjh aye tow zaida le lijiye ga.     very good information...but one thing want to tell that in India pulaw is that in which rice cook in yakhni of meat, n biryani is meat n rice made saperatly and then layer then together

    @food scientist, Kya ap bta skte hai ki biryani cooking mein rice ki layers ko Bartan ke upar tk bhr skte hai ya brtn k adhe tk hi bhrna chahiye.
    Mere brtn mein chawlon ki layers k neeche pani iktha ho gya tha jise sukhana pda. Kya glti hui hogi? Thx

    What is your opinion on food colors. I understand some outfits are using textile and industrial colors.

      better to avoid them altogether whether food grade or not specially in a country like pakistan. Even some foos grade colors are derived from insects which one cant consume.

    Salam Bhai! Apki Awaz Mashallah Boht piyari Andaz e bayan boht Khoob. please point 11 samjh nhi aya. pani ko phele boil karie phir is me rice add karie ya dono ek sath add kar k high flame par cook karie.

      first let the water boil then add soaked rice to boiling water and cook on highest flame

    Thank you so much for your information, i have been looking forward to it. I have a question please. I love to make kacchi biriyani. Can you please tell me what should be the quantity for nutmeg amd mace for 5 kg meat. If i give one table spoon each, will that be fine? or i need to add more to enhance the flavour? Many people are too cautious about using this two garam masala. Thank you in advance.

    Excellent explanations, I hv a query, I tried once bottom layer with rice than korma than rice but rice was became khurchan and not edible, ye kyon hota hai? Aur sahi tarika bataye jab nichli teh me chawal lagana ho k chawal na lage neeche

      thoray buhat chawal lagtay hain painday per. sacrificial layer hoti hai chawal ki mamoli se necchay jo jal jati hai. to avoid it dont over cook the dish and use heavy bottom pans ya deghchi ke neechay mota tawa rakhain. thanks.       I dont use artificial food colors and flavors.......and I would advice you ke plz food color ka istemaal bund kerain....yeh koi food grade nahi hotay.
