Sahi banaye hain aapne authentic bane hain, main bhi bana chuka hu aur maine pehle 2-3 mahine research kiya tha Chapli Kabab pe phir banaye the isliye keh raha hu ki authentic bane hain ingredients ke hisab se but mere problem yeh thi ki meri wife beef nahin khati hain to mujhe mutton ke hi banane pade, dusra unhone Kabab khane se mana kar diya tha agar main charbi mein banata to maine ratio change kar diya tha aur 25% charbi use kari thi taki unhe pata na lage. Charbi zyada thi to mere kabab thode dark ho gaye the aapke kabab ke muqable. But bane lajawab the
Acha ek fark jo mujhe laga woh yeh ki aapne tamatar 2 tarike se use kare hain, ek kate hue, dusre baad mein upar se slice. Mardan ke jitne bhi videos maine dekhe the usme ya to kate hue ya phir upar se slice but dono nahin use kare jo ki mere hisab se sahi hai kyunki recipe mein anar dana bhi hai to agar dono tarah ke use kare to kabab mein khatas badh jayegi. Aloo gosht, aloo qeema, nihari, qourmay mein lal rung ka tira to opper hota hay Pakistan mein khanoon mein woo nahi la paa raha mein. Meray salan aksar brown rung kay bantey hain. I am tired of trying, I think I am making some mistake. Aap ney note kiya hoo ga bihari ki shops per Pakistan mein aksar woo aik red oil type ki cheez daltey hain end per. I spoke to my mom in Pakistan she said it's called tira ya teri. Please help me out for aloo qeema ka salan with red teri/tira. Sahi banaye hain aapne authentic bane hain, main bhi bana chuka hu aur maine pehle 2-3 mahine research kiya tha Chapli Kabab pe phir banaye the isliye keh raha hu ki authentic bane hain ingredients ke hisab se but mere problem yeh thi ki meri wife beef nahin khati hain to mujhe mutton ke hi banane pade, dusra unhone Kabab khane se mana kar diya tha agar main charbi mein banata to maine ratio change kar diya tha aur 25% charbi use kari thi taki unhe pata na lage. Charbi zyada thi to mere kabab thode dark ho gaye the aapke kabab ke muqable. But bane lajawab the

Acha ek fark jo mujhe laga woh yeh ki aapne tamatar 2 tarike se use kare hain, ek kate hue, dusre baad mein upar se slice. Mardan ke jitne bhi videos maine dekhe the usme ya to kate hue ya phir upar se slice but dono nahin use kare jo ki mere hisab se sahi hai kyunki recipe mein anar dana bhi hai to agar dono tarah ke use kare to kabab mein khatas badh jayegi. Maine slice prefer kiya tha kyunki main kate hue use karne se tamatar ka pani keeme ko geela kar deta aur kabab tootne ka dar hota phir mujhe makai ka aata badhana padta jo Kabab ko grainy texture de deta. Ek cheez aur mujhe kabab mein kaccha anda daalna pasand nahi hai kyunki mere hisab se woh meat ke zaike ko impact karta hai isliye maine ande ko omelette type bana ke Chop kar ke mila diya tha taki keeme mein na mile

Aloo gosht, aloo qeema, nihari, qourmay mein lal rung ka tira to opper hota hay Pakistan mein khanoon mein woo nahi la paa raha mein. Meray salan aksar brown rung kay bantey hain. I am tired of trying, I think I am making some mistake.
Aap ney note kiya hoo ga bihari ki shops per Pakistan mein aksar woo aik red oil type ki cheez daltey hain end per. I spoke to my mom in Pakistan she said it's called tira ya teri.
Please help me out for aloo qeema ka salan with red teri/tira.

never wash mince meat. qeema kerwanay se pehlay ghosht wash kiya ja sakta hai lekin never after being minced. it will lose all its myoglobin which helps in binding the patty. Do watch part 2 of Karachi Fishery Documentary by Food Scientist
