Sir what can I use after I took off kombu
Katsuo bushi is good for any kind of japapese soup.
unfortunately, shaved katsuo bushi is over 5 euros per 25 gram and kombu is also around 5 euro for 30-40 grams. this would make it extremely expensive for me to do this cooking. (5 euro is about 600 yen) I think I will have to resort to dashi powder and make the real stock on special occasions. ):
