I got a question. Why fry the cutlet, make it crispy and then put it together with a liquid that causes the crispiness to be lost? Wouldn't that make the starch just gooey? I'm genuinely curious. That's also done for Tempura.
Does anyone know the name of, or how to make the "bean sauce" they cook the onions in before adding the katsu? I'm familiar with the regular dark, sweet katsu sauce that goes on top, but not what it's actually cooked in :)

I recommend checking out “Solo Travel Japan,” he orders several dishes of food and even goes to 2-3 restaurants in one day just to eat. His stomach is nigh bottomless. It’s insane. STL is hilarious, too, he says he is full but orders a big dessert. Lol.

A combination of Dashi broth (made with Katsuobushi and Kombu kelp), Sake, Mirin, and Shoyu (Soy sauce).
Tsuyu or Shyoyu
I’ve tried with soy sauce, mirin, and a dash of water. It’s good.
