    About Me:
Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a three-time author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.
Keith is the co-host of the More Than Masala Podcast as well as the chef owner of Aatma Restaurant & The Farmers Dinner. He is also the author of 4 best selling cookbooks

You absolutely have to, have to try these in Mumbai (if you can spare some time from your busy schedule):
    1. Chicken Lollypop - Cafe Shalimar
    2. Rumali roti and Chicken Bhuna - Bademiyan
    3. Kheer - Crystal
    4. Butter chicken and roti - Gokul
    5. A1 Gajraj chai - Gajrat Tea Stall, Near Haji Ali.
    6. Chicken Nargis and Rumali Roti - Cafe Noorani, Tardeo, Haji Ali
    7. Chicken Kolhapuri, Roti, and Sol Kadi - Aatmashanti, Saat Rasta
    8. Chicken/Mutton Curry + Plain rice - Taste of Kolkata, Kandivali West. (Before going there, call them beforehand and ask them which one they made fresh, they make either chicken or mutton fresh on a given day). Taste to die for.
    9. Sitaphal Icecream - Naturals (Its a chain, you will find it anywhere, just Google the nearest one).
Thank me later. From someone who lived in Mumbai once, now missing it after watching your videos in Birmingham, AL.

Kolkata is where you need to go to eat aurhentic pan indian food. Theres a reason why- kolkata was the first capital of india , before delhi. So the public migrated with their local cooks to kolkata back when trade was done via ships. When those people migrated elsewhere, their cooks stayed behind and started food businesses there. You will find really good pan indian food in kolkata.

Places to eat at in Mumbai:
    1. Elco Pani puri - (area - Bandra west in Mumbai) -
One of the best Pani puris in town. Very clean & hygienic. They use bottled mineral water to make these. So very safe to eat Pani Puris at this place.
    2. Sardar Pav Bhaaji - (area - Tardeo in Mumbai) -
The best and the most buttery Paav Bhaaji on Planet Earth.
    3. Bade Miyan - Late night place - is open till 3 am or so (area - near Taj hotel & the Gate way of India in Mumbai)
A late night place, patrons eat in their cars, but has a seating area as well. Famous for their wraps, Tikkas, Tandooris & barbecued stuff.
    4. Leopold Cafe (area - Colaba causeway in Mumbai) - Nice beer, barbecues, nice desserts.
    5. Pancham Puriwala - (area - fort in Mumbai) - 5 types of puris(bread), savory dishes & desserts.
    6. Persian Darbar - (area - Bandra west in Mumbai)
Famous for their Raan Biryani. Delicious Mughlai cuisine. You'll love it.
    7. Mahesh Lunch home - (area - Juhu Tara road in Mumbai)
Heaven for Sea food lovers. Very clean & hygienic and you can get the most iconic sea food dishes here.
    8. Mini Punjab's Lake side - (area Powai in Mumbai) * Need to call and book a thaali(platter) in advance.
Famous for its Dara Singh Thaali - available in both veg & non-veg versions. A must try.
    9. Britannia & co. restaurant - (area - Ballard estate, Fort in Mumbai)
Famous for its Irani / Parsi cuisine. Awesome Desserts & Sodas.
    10. Anand Stall - (Vile Parle west in Mumbai)
A fast food joint famous for its awesome Vada Paav, Sandwiches & Dosas.
    11. Mohammed Ali road - (Area - CST - 6 pm onwards till late night)

I've been following through your tiktok posting lows, I can see you as another Anthony Bourdain with your genuine passion, intellect, and charm. I'm serious! Being a boots-on-ground documentarian of niche Indian cuisine is a really cool idea, especially in the changing world and kinda capturing a snapshot of culture and food in this time.
I can even see it growing into a celebrity career in India/worldwide as a historian if you do the rigor and research on the production side as well bec you've already got the heart for it. You're doing really unique stuff!
A channel with similar goals I see who's depth and interdisciplinary nature would be a great frame to adopt who's doing something similar is miniminutemen who is taking the travel documentary style to ancient ruins but intermixes geology, anthropology, sociology, history, geography, ethics, etc into the videos. sorry for the info dump haha I just got excited by your comment :D @@chefKeithSarasin

    Hey Keith :
I guess you have had an opportunity to try out some very rare, wild and delicate food stuff. Such an experience of rare gems can only be made available by food coonesiuers.
Am very happy to the lovely Indian couple taking you to such inique places with delectable items to taste.
Enjoy and have a good time my friend. Am sure you will carry back memories of such a life time experience that you learnt in your journey to India.
You are a flag bearer who can popularize some of the dishes back in the US, as-is or with a twist.
    All the very best !!!

I trust you have experienced the flavors of Maharashtrian cuisine, such as Kalhapuri Sukka Mutton (dry), Tambada Rassa (red stew), and Pandhara Rassa (white stew). Additionally, dishes like Malvani Fish Curry, Malvani Fish Fry, and Fish Koliwada are noteworthy. I recommend exploring these authentic dishes. The ones featured in your recent video aren't traditional Mumbai dishes, as the individuals preparing them have migrated from North India, specifically Delhi to Uttar Pradesh, and resettled in Mumbai. If you are still in India, I encourage you to revisit Mumbai-Maharashtra or consider featuring Maharashtrian cuisine in your future travels. Thank you for your content, and I appreciate the engaging background commentary. 🎉
