About Me:
Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a three-time author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.
Keith is the co-host of the More Than Masala Podcast as well as the chef owner of Aatma Restaurant & The Farmers Dinner. He is also the author of 4 best selling cookbooks

I literally don't know, how many foreign chefs visited India for inspiration but one thing I want to say is many of them think Mumbai is a hub of Indian cuisine. This is not true.In a versatile country like India you should have to visit each Street to taste the variety of food. I think a life span is smaller for that.

most of the people i have seen dont go for the good food, they just barely touch the surface. they take couple snacks and then jump to the most common lunch most commonly choosing chicken buter/ tikka masala.
foods like vadapav, dosa, buns, golbaji, idli are the dishes that properly define and showcase indian food.

@@chefKeithSarasinJust a suggestion your gut biome is different than ours it can't handle our spice or new strain of bacteria. Please eat yogurt everyday that will introduce good bacteria in your digestive system and thus preventing from getting food poisoning or diarrhea.
Many people come here and complain about this same exact thing. Also just a suggestion avoid street food that is not hygiene at all it can ruin your trip.

Eat fruits, nuts and greek yogurt on daily basis ... This will increase amount of good bacteria in your gut and naturally make you more immune to bad ones

When a restaurant chef cooks it he cooks to earn money...
But when the same food is cooked by a mom or sister with love it tastes awesome...
Whenever theres option of mud cup, i go for it, earthy flavour it adds is heavennnnn

Places to eat at in Mumbai:
1. Elco Pani puri - (area - Bandra west in Mumbai) -
One of the best Pani puris in town. Very clean & hygienic. They use bottled mineral water to make these. So very safe to eat Pani Puris at this place.
2. Sardar Pav Bhaaji - (area - Tardeo in Mumbai) -
The best and the most buttery Paav Bhaaji on Planet Earth.
3. Bade Miyan - Late night place - is open till 3 am or so (area - near Taj hotel & the Gate way of India in Mumbai)
A late night place, patrons eat in their cars, but has a seating area as well. Famous for their wraps, Tikkas, Tandooris & barbecued stuff.
4. Leopold Cafe (area - Colaba causeway in Mumbai) - Nice beer, barbecues, nice desserts.
5. Pancham Puriwala - (area - fort in Mumbai) - 5 types of puris(bread), savory dishes & desserts.
6. Persian Darbar - (area - Bandra west in Mumbai)
Famous for their Raan Biryani. Delicious Mughlai cuisine. You'll love it.
7. Mahesh Lunch home - (area - Juhu Tara road in Mumbai)
Heaven for Sea food lovers. Very clean & hygienic and you can get the most iconic sea food dishes here.
8. Mini Punjab's Lake side - (area Powai in Mumbai) * Need to call and book a thaali(platter) in advance.
Famous for its Dara Singh Thaali - available in both veg & non-veg versions. A must try.
9. Britannia & co. restaurant - (area - Ballard estate, Fort in Mumbai)
Famous for its Irani / Parsi cuisine. Awesome Desserts & Sodas.
10. Anand Stall - (Vile Parle west in Mumbai)
A fast food joint famous for its awesome Vada Paav, Sandwiches & Dosas.
11. Mohammed Ali road - (Area - CST - 6 pm onwards till late night)
The whole street is filled with street vendors who sell various non-vegetarian stuff and some vegetarian too. Plus, there are some really nice restaurants on the same street. Try the famous dessert that you get only on this street in a sweet shop. The dessert is called Aflatoon.

Brilliant work! I think, if there is a big take away for you and most of the other tourists, besides the obviously mind-numbing good food, is that how eco-friendly We live our daily lives. Right from using a newspaper as a plate, to using clay cups for tea/lassi etc. , to even storing all the glass bottles/jars that we get from take-aways and using them later at home. :)

If you want the full Ginger Chai aka Adrak Chai experience, then you need to crush your ginger using a mortar and pestle before you boil it in the water. Let the ginger boil with the basil for a minute or two before you chuck in the tea leaves. Followed by Milk and Sugar (to taste). Welcome to India.

I'll drink chai masala once a while but in all honesty the Desi style cooking chai is wonderful and something done when guests come around, its not convenient when you just want a quick brew. So use Nido powder instead to get that creaminess without the 30m being at the stove stirring and watching.
