Commercial meat alternatives are convenient but certainly pricey. Our local store only has some vegan sausages and burgers. So, we usually just make the meatier foods ourselves. I am glad it's moving towards Spring in Montreal! It has actually been alternating rain and snow today in southeast Michigan! It looks like Autumn out the window. It's windy, the leaves left over from months ago are tossing about, the deer are bedded down in my backyard for the evening . . . It's like November again, and I am very disoriented! Hot tea to the rescue : )
I wonder if you can use Cellulose gelatin in the mixture, to Mimic an egg for binding the ingredients... instead of more water. I also wonder if you would be better to pulse/chop the large TVP chunks slightly, before the soak instead of after the soaking in hot water. It may change the texture. It looks pretty Tasty.

You can simmer them for about 15 minutes in sauce or soup and they will hold pretty well, but once they soak up enough liquid, they become a little more fragile. So, you'll need to serve soon after. That said, I have reheated leftovers of these balls in sauce before and they were still holding their shape. I guess it also depends on how thick or thin the sauce is. Thin sauce means that they will soak up more liquid and become more fragile. I hope this helps.
I can't think of anything that would give you a texture as close to TVP. You could try with cooked beans+mushrooms or as some people have suggested with eggplant. But these will yield an entirely different texture and taste. And also the proportions of the other ingredients in the recipe will have to be adjusted accordingly as they each have different water content etc. Maybe you could use the Veggie Burger recipe that's on the channel and make them into balls instead, just use a little less liquid or add more oats so that you can form the balls more easily. +Vania Guedes The closest in terms of taste to Marmite is Vegemite. You may use nutritional yeast (1-2 tablespoons) and it will add a savoury taste but it is not exactly like Marmite. If you can't find any of these, just omit it and add a little more soy sauce.
It's similar to a sort of beefy-savoury-browning sauce mix. It's really great! A jar lasts me forever. If you can find it, get Marmite XO. I'm American, by the way, and I love it!

Why not leave the TVP in its round form? as they'd still be coated by seasoning. Interesting recipe. Thank you.
They are quite small chunks so this allows for bigger meatballs to be made. Also mincing them changes the texture.
