Summer is here, and Ali Slagle is back in the studio kitchen making not one, not two, but THREE ice cream cakes to celebrate. First up is her Orange Creamsicle Ice Cream Cake, which tastes just like the classic sweet treat and uses vanilla wafers for a crust. Ali then shows us how to make a variation with different ice cream flavors, because this cake is versatile, baby! To make her Mint Chocolate Chip Ice Cream Cake, you need only a pan, a spoon and four store-bought ingredients, including ice cream sandwiches, which make up an entire layer of the cake.

Thaw the ice cream in the fridge so it gets soft but not melty! (Amazing tip from Cook's Illustrated.) This is a great technique for ice cream cake though, thanks for sharing.

I made this with the help of a 4 yr old. So easy, so delicious, so much more impressive and far less expensive that a store bought ice cream cake. I used frozen yogurt: vanilla and chocolate cherry with shortbread cookies as the base. The more free form the better!!

I use a container of hot water to dip my ice cream scoop/spoon in before using it each time. Heats the metal and saves bending spoons and breaking scoops 😬 Love the bright colours!

Found this quite disappointing. Who can afford to buy all those containers of top brand ice cream and other ingredients besides? By the time you add up the total cost to make just one of those ice cream cakes, especially the mint chocolate one, it has to cost way more and be infinitely more time consuming than just buying a ready made store bought ice cream cake. And for a recipe developer to say, "this will serve, I don't know, maybe 30, maybe 15?". How the heck can you not know? Did you actually make this before shooting the video or did you just wing it for the video? The high cost, time and trouble of this so called recipe, along with the rather careless attitude of the presenter was just one big turn off. Sheesh, expect better than that from NYT!
