Great wings videos, I love wings and have tried many methods looking for the best possible wings. I have settled on using the Vortex in my BGE, start with them on the edge and indirect heat at about 400 degrees, once wings are at 165, I move them over the direct heat in the center of the grate, this gives them the char and crispiness that I like. I highly recommend you give this method a try. Again, thanks for the quality videos!!!

It's a lot of fun and starting to think about other things i can do with it. Love Blue Hog Nation and that Red Sauce is solid! My favorite on ribs is raspberry chipotle.

Nice video and good looking wings!! One question: would you describe that using the basket on classic joe is pain in the ass because of those tightning bolts are so close to the edege of joetisserie ring?
Thank you! No doubt it's a tight fit and took a few attempts to figure out placement to navigate the bolts. Once you figure it out, it honestly works great. It's more of a pain to clean! Still, it's one of my favorite ways to do wings, & fries.

The newest KJ version wasn’t out when this was filmed. I have done a lot of cooks with the new one on the channel. I no longer use this version anymore as the new one is so much more versatile.
I have the Napoleon basket for my KJ Classic II. I've tried using it a couple of times and each time the basket came open, dumping the wings onto the hot coals. I've checked where the basket halves connect and they seem secure. Have you ever had the basket open up during the cook? There's only one way to connect the two halves and can't understand what is causing it to open up each time. Has anyone had this problem?? Any suggestions would be greatly appreciated.
Hi Joe! I'm sorry to hear about the issue with the basket. I haven't had that issue. I have had the opposite issue trying to open it up after the cook. I know it snaps together making a locking noise. You may try ensuring it's locked by moving it around before testing movement. It's possible you have a bad batch of the basket.
@@BartlowsBBQ In looking over the basket after your post, I noticed one of the clips on the back of the basket would not hold tightly and seemed to come out easily. The stainless was so tough to close some, I put it in my vise to clamp it tightly. It now secures tightly and I don't see it coming apart. I checked the front latch and It was secured tight so I can't see it coming apart from that side. I feel a lot better now that clip I tightened will keep the basket from coming apart when I do my next cook. I enjoy your videos and I saw on a previous video you had a roll around stand for your Joe Jr. I purchased the stand and it gives me a lot more mobility for my Joe Jr. Thanks again for your informative and excellent videos and look forward to them!

I do mine the same way except I don’t put my sauced wings back in the napoleon. I just in stall the grill grates and let the sauce tack up that way

why this basket over the Kamado joe version? That looks like some thin stainless steel mesh. Any idea what the composition of the stainless tht is?
