What machine are you using? I work with a Sanremo RS and have to manually weigh each dose and time the extraction to ensure the best flavour. Does your machine do that automatically?

Hi Mohamad, well, it is indeed tricky. The most important Thing when using the foam of a French press to pour latte art is to work really really fast so the foam doesn't get the Chance to separate from the milk.
To ensure that the milk is moving so the foam doesn't separate from the milk. Also, that's a way to make sure that I have enough milk crema left for pouring a second drink :-)
Can anybody tell me why he is taking the first one or two ounces off the top of the milk? Is he doing that too reincorporate it? Does it get steamed again?
Hi Andrew, thanks for your questions: two reasons: to keep the foam from rising to the top - so stop separation between foam and milk which occurs right after steaming. and to have the right amount of milk in the pouring pitcher, which makes pouring easier.
Dritan Alsela What's the MOST important factor to make good latte art good cold milk, or steam power? I dunno if it's because I have a single boiler that doesn't kick out near as much steam as a a commercial. Do bigger more powerful steam wands create better microfoam or is it just PRACTICE PRACTICE PRACTICE! I got a breville duo temp that was a major upgrade from my delongi. I don't know if because it's taking a little longer than a commercial steamer if I'm getting too much wet steam in my microfoam. I can just start to get s Rosetta but cannot for the life of me get the swirls in the Rosetta just mabey a heart. So is it the machine or me? Haha thanks for any advice. Lastly how much of a role does the spout of the steam mug affect the pour. My steam mug doesn't have as big of spout on the end as the one your using so getting a consistent stream to come put can be difficult.
Not bad but you can do better, I'm melbourne based right now and here pretty much every barista can do that, you should try some new patterns like swan,double swan etc.. plus if a few patterns you broke the cream and I'd honestly pour further from the edges while making rosetta..ps very nice coffe machine
