Absolutely incredible! Do you know how much froth ends up being in your lattes? We use clear glasses where I work and am having trouble keeping the right amount of froth on top....
Hi April, thanks for your comment :-) My Lattes have around half a cm of foam.. that's how we do it here in Germany :-) My Cappuccinos in turn always have a Minimum of 1 cm. Ending up with the right amount of foam is really a matter of practice. To be able to Control the amount, I always work with 2 jugs.. so I can mix my milk back and forth. :-) You do that too already?

Hey Luke, the ones in the tall glass are called Latte Machiatt. And concerning the other question: Latte Art does not refer to art on "Lattes". It's the general term for describing the "milk art" regardless of the drink. So milk art on a Cappuccino or Flat White is also "Latte Art" (=milk art) Hope this was helpful

Hey there, yes. It's indeed a way to keep the milk moving. If you don't, the foam separates from the milk and you end up loosing the nice microfoam/crema which you need.
It's mad skill that you can froth milk for multiple latte and still be able to manage that micro foam. I can't even make it smooth for one. "Thumbs up"
Crema when it comes out of the portafilter is composed of the oils and CO2 that is created though the process. As time passes the C02 is lost which is why if you wait too long (10, 20, + seconds) it will look more like an oil slick. You can see this really well when for example you pour a 60 second old shot into water for an americano. When you pull shots directly into a cup there is much less CO2 loss from the disruption that happens when pouring from a shot glass into a cup, so if you shoot directly into a cup you will have much more time (20 - 25 seconds depending on setup, equipment, grind, roast, etc. etc).

I think he does that to get the right density of milk foam. If the foam is too thick on your pouring pitcher, you can pour some off.
