I love making what I call crack candy. It’s just hard sugar candy. This year I made pulled sugar candy, pulling it for the first time, but will invest in heat gloves for the next time. Tip: I have learned that if you have both Karo and water in the recipe, measure the water first and the Karo will just slip right out of the measuring cup😊 It works the same for oil and water in a recipe. Always measure the water first. I can’t wait to try this recipe ! I love making candy for the Holidays and the Old Recipes are the best !! I also wet the inside of my measuring cup before I measure peanut butter….doesn’t stick to sides of the cup 😊
My mom used to make this nougat candy at Xmas back in the 60’s and 70’s. She used chopped almonds and cut up bits of maraschino cherries. One year she held back a small amount of the candied red and green cherries and citron from her fruit cake recipe, chopped it finely and added it. It was the best ever and very festive. I love that you’re keeping a family tradition alive.
My grandmother used to make that..in trying to find that recipe again it was WAY more involved than I cared to even try. but I found a fairly easy recipe here on UA-cam.. peeling the almonds is more than I'd planned on (blanching), but I suppose it's necessary for the texture.. my grandma used to put currants instead of cherries and almonds or pecans as ad ins..mmm, delicious, just like tasting a memory, did your mom use honey in the recipe? my recipe did not include it which was definitely surprising.. that was always something that I remembered about grams recipe! The copious amounts of honey which could break the bank on a grocery list!

I'm not sure it's possible to improve on this absolutely delicious candy, but for my second batch I toasted the chopped pecans in a 300° oven for 20 minutes before starting the syrup. I also added 1/2 teaspoon of salt to the syrup. The toasted pecans gave the candy a different flavor and we liked it even more than the original. Thanks a million for the fantastic recipe!

Using a clear glass for your soft-ball water test lets you SEE the ball form as it sinks in the glass of water. No fishing around with your finger to try and grab it to see. Only way I've ever done it. Always works.
This sounds much like something my dear neighbor made me every year - but it had cinnamon in it and was rolled on cinnamon. My ALL TIME favorite candy! She rolled it in little logs and cut pieces off. It was amazing and melted in your mouth.
My Grandmother used potato candy to stuff dates and wrap around candied cherries, her Xmas gift to her children's families when I was a child was large boxes of homemade candy and fudge. Those are memories from 65 years ago. I enjoy hearing that peop!e are making those recipies again, or that they were their family favorites also.

Brach's Jelly Nougats can be bought on Amazon for different prices/amounts. They use jelly beans. My Mom used to work in a department store with a small candy counter. They sold little rectangular blocks. Now it's round like salt water taffy. I've thought about buying them but haven't. Maybe we should make them. It's a lot cheaper!
@@cathykeatonkedney3433 Yes, I remember those blocks of nougat with the dried/candied fruit in it ..... each block neatly wrapped in it own little blanket of cellophane. I have also had it with multicolored bits of jellied candy (comparable to Jujee Fruits). Either way, I would always pick out the candied bits to eat first and then savor the nougat by itself.

My kids loved this recipe. The only thing I did was replace the pecans with sliced almonds and added toasted coconut. I then coated the top with Heath bar chips. Like she said,” Make the recipe yours!” I’m very happy I saw this video.
Paul Revere's copper bottom pots are a must have for candy making. I used others and they always ruined my candy. Must be the one's from the 1960's or 1970's. These are more precious than gold if you make candy. And no preservatives in my candy! My family always made our own. Mother never learned to drive so we made everything ourselves.

My great grandfather used black walnuts in this candy. I mix pecans and black walnut meats. First time I have ever seen this recipe used by anyone else. It is also good used as an icing on white cake layers. My grandmother, who lived to be 102 years old, made this cake often. P.s. She did not use the white corn syrup. Enjoyed this so much, thank you! And, yes, I did subscribe.
I love black walnuts. I had a tree outside and the branches it shed was good in the barbecue. I think the owner of the property took it out even though they are protected in California. Not too many left. 😢
My dad would use black walnuts. He also made meringue cookies and added chocolate chips and black walnuts. He and I were the only on who liked black walnuts.
How would she make it without the corn syrup? I think you're referring to '7 Minute Frosting' where the sugar is cooked, then whipped egg whites are added?
I love that you are keeping this tradition alive for your family. I try to do the same with my children as my Dad passed when I was 16. You can add just about anything to this mixture!! Any type of nut a person likes, and/or one can add the mixed dried fruit you can buy for making fruit cake, usually located down the baking isle, or in a center lane where they'll have seasonal baking specialties or use any dried fruit, but it must be dry. So, if there is a fruit you would like to use but cannot find it dried, one can use a dehydrator to fix some. IF you don't have a dehydrator, one can set the oven at 195℉ until fruit has lost the exterior moisture and can be squeezed and no liquid comes out. IF the fruit isn't dry enough it could turn the candy bad. Maraschino cherries are good as well but must be dry. They have less chance of going bad so just be sure they are dry while handling. The candy is kicked up another notch is adding both fruit and nuts in the mix together!!! My Mom and Grandma used to add some green to a third of it or make 3 batches and then add red to another batch so there would be white light red and light green for traditional Christmas colors!!
I’m surprised it doesn’t call for a dash or more of salt. I think I’ll add some when I make this. Mama told me once that you can never get sweets right without it. That’s probably why you say it is so sweet. Anxious to be eating this!! Thanks!
I used almonds, some maraschinos and citron, and almond extract. I think I overcooked - it was hard. I liked it, but I agree about the salt. I did toast my almonds.
Oh, I can definitely see this as a base for so many wonderful ingredients! My Dad used to make a few different kinds of candy and chocolates for Christmas every year, too, with some good combinations. He passed on four years ago of congestive heart failure, and was not able to make any at all the last few years before he went home to be with the Lord. This reminds me of all those happy Christmases with him, and I know it will be fun adding this recipe to my Dad's! I am thinking of trying brazil nuts in place of pecans. I would think any type of nut or combination of them would be good! The possibilities are almost endless! Thank you so much for sharing! 😋🥰
My grandmother died in 1946 and she made Sea Foam candy recipe from Jewell Tea cookbook. It looked like this candy and cut in squares. I was only 4 yrs old then but I have her small cookbook that was given away by Jewell Tea Co who sold door to door all kind of cooking and household products.

3 cups of sugar, half a cup of very cold water, half a cup of (Karo syrup with vanilla) which I leave in the refrigerator. My pecans I cut larger. I want a bite to it. I beat two egg whites to like marangue pour vanilla at last and beat. Stir sugar mixture along to know when the sugar mixture will be ready. Test mine when a hair line falls from spoon. Then I pour the sugar mixture in the egg whites like small stream. I beat with a hand mixer till it starts getting thick. I stir in pecans. spoon out on wax paper. Never have heard of using it for a base to add other in. thanks. I use a hand mixer because it has a harder texture like old fashioned. I might use my kitchen aid mixer cause it is more creamy to add other in.
I think it's so much fun to test with this method. And so satisfying when it makes that perfect little ball. TFS this old family tradition. I hope lots of young women (or men, too) see this and learn something new/old and make this part of their own tradition.
@@BootsAndBonnetWithChrisChristy It is absolutely divine! My boyfriend ate 12 pieces before I could stop him and he doesn't really like cranberries or pecans. I toasted the pecans before I put them in the food processor and it came out a little like crumbly pecan butter instead of a dry crumb, but I added it anyways with about a cup of dried cranberries. Almost didn't make it into the buttered dish, but I did it. I have a feeling that I'm going to have to make another batch soon. He requested I try making it with some candied lemon peel I have, so I may try that!

My mom always started making her potato candy right after Thanksgiving, and most of the time she would let me choose the flavor(s) that I wanted the candy to be. Of course I would be drawn to dark chocolate with cherries or with creamy mint dream, but it was all AMAZING for us kids, and many times treats were shared with 5 (or 6 or 7 or 8...) beloved family members to keep the goodness growing!

Can you use maple syrup and leve off the water, I don't have Karo syrup and no way to get it but this sounds delicious 😋

This sounds much like something my dear neighbor made me every year - but it had cinnamon in it and was rolled on cinnamon. My ALL TIME favorite candy! She rolled it in little logs and cut pieces off. It was amazing and melted in your mouth.

My Grandmother used potato candy to stuff dates and wrap around candied cherries, her Xmas gift to her children's families when I was a child was large boxes of homemade candy and fudge. Those are memories from 65 years ago. I enjoy hearing that peop!e are making those recipies again, or that they were their family favorites also.

My grandmother & mom made this , they would take those candied fruit slices & chop them up, & add it. At 1 time Brach's candies made these, can't find it in the stores now. I recall how delicious it was. ( The home made with love kind). Thank you Christy for this video. Have a blessed week!

Brach's Jelly Nougats can be bought on Amazon for different prices/amounts. They use jelly beans. My Mom used to work in a department store with a small candy counter. They sold little rectangular blocks. Now it's round like salt water taffy. I've thought about buying them but haven't. Maybe we should make them. It's a lot cheaper!
@@cathykeatonkedney3433 Yes, I remember those blocks of nougat with the dried/candied fruit in it ..... each block neatly wrapped in it own little blanket of cellophane. I have also had it with multicolored bits of jellied candy (comparable to Jujee Fruits). Either way, I would always pick out the candied bits to eat first and then savor the nougat by itself.

My kids loved this recipe. The only thing I did was replace the pecans with sliced almonds and added toasted coconut. I then coated the top with Heath bar chips. Like she said,” Make the recipe yours!” I’m very happy I saw this video.

Paul Revere's copper bottom pots are a must have for candy making. I used others and they always ruined my candy. Must be the one's from the 1960's or 1970's. These are more precious than gold if you make candy. And no preservatives in my candy! My family always made our own. Mother never learned to drive so we made everything ourselves.
Wish I still had my Revere ware.

My great grandfather used black walnuts in this candy. I mix pecans and black walnut meats. First time I have ever seen this recipe used by anyone else. It is also good used as an icing on white cake layers. My grandmother, who lived to be 102 years old, made this cake often. P.s. She did not use the white corn syrup. Enjoyed this so much, thank you! And, yes, I did subscribe.
What did she use? I cannot eat corn. I thought about using honey.
I love black walnuts. I had a tree outside and the branches it shed was good in the barbecue. I think the owner of the property took it out even though they are protected in California. Not too many left. 😢
My dad would use black walnuts. He also made meringue cookies and added chocolate chips and black walnuts. He and I were the only on who liked black walnuts.

I love that you are keeping this tradition alive for your family. I try to do the same with my children as my Dad passed when I was 16.
You can add just about anything to this mixture!! Any type of nut a person likes, and/or one can add the mixed dried fruit you can buy for making fruit cake, usually located down the baking isle, or in a center lane where they'll have seasonal baking specialties or use any dried fruit, but it must be dry. So, if there is a fruit you would like to use but cannot find it dried, one can use a dehydrator to fix some. IF you don't have a dehydrator, one can set the oven at 195℉ until fruit has lost the exterior moisture and can be squeezed and no liquid comes out. IF the fruit isn't dry enough it could turn the candy bad. Maraschino cherries are good as well but must be dry. They have less chance of going bad so just be sure they are dry while handling. The candy is kicked up another notch is adding both fruit and nuts in the mix together!!! My Mom and Grandma used to add some green to a third of it or make 3 batches and then add red to another batch so there would be white light red and light green for traditional Christmas colors!!

I used almonds, some maraschinos and citron, and almond extract. I think I overcooked - it was hard. I liked it, but I agree about the salt. I did toast my almonds.
Oh, I can definitely see this as a base for so many wonderful ingredients! My Dad used to make a few different kinds of candy and chocolates for Christmas every year, too, with some good combinations. He passed on four years ago of congestive heart failure, and was not able to make any at all the last few years before he went home to be with the Lord. This reminds me of all those happy Christmases with him, and I know it will be fun adding this recipe to my Dad's! I am thinking of trying brazil nuts in place of pecans. I would think any type of nut or combination of them would be good! The possibilities are almost endless! Thank you so much for sharing! 😋🥰

My grandmother died in 1946 and she made Sea Foam candy recipe from Jewell Tea cookbook. It looked like this candy and cut in squares. I was only 4 yrs old then but I have her small cookbook that was given away by Jewell Tea Co who sold door to door all kind of cooking and household products.

3 cups of sugar, half a cup of very cold water, half a cup of (Karo syrup with vanilla) which I leave in the refrigerator. My pecans I cut larger. I want a bite to it. I beat two egg whites to like marangue pour vanilla at last and beat. Stir sugar mixture along to know when the sugar mixture will be ready. Test mine when a hair line falls from spoon. Then I pour the sugar mixture in the egg whites like small stream. I beat with a hand mixer till it starts getting thick. I stir in pecans. spoon out on wax paper. Never have heard of using it for a base to add other in. thanks. I use a hand mixer because it has a harder texture like old fashioned. I might use my kitchen aid mixer cause it is more creamy to add other in.

@@BootsAndBonnetWithChrisChristy It is absolutely divine! My boyfriend ate 12 pieces before I could stop him and he doesn't really like cranberries or pecans. I toasted the pecans before I put them in the food processor and it came out a little like crumbly pecan butter instead of a dry crumb, but I added it anyways with about a cup of dried cranberries. Almost didn't make it into the buttered dish, but I did it. I have a feeling that I'm going to have to make another batch soon. He requested I try making it with some candied lemon peel I have, so I may try that!

Oh, yes! I loved potato candy as a kid. My mom said she first had it as a kid in the 1920s/30s.
My mom always started making her potato candy right after Thanksgiving, and most of the time she would let me choose the flavor(s) that I wanted the candy to be. Of course I would be drawn to dark chocolate with cherries or with creamy mint dream, but it was all AMAZING for us kids, and many times treats were shared with 5 (or 6 or 7 or 8...) beloved family members to keep the goodness growing!
@@nadinehaney6590 The only potato candy I knew of was with it rolled up with peanut butter in it. I always thought about dipping the slices into chocolate. Might have to make some and experiment.
Hillbilly Kitchen has a great video on making it. Our ladies groups used to get together and make 100's of batches of it. It's great stuff!
