Loads of butter 😋 And before anyone comments of the “dangers of eggs and butter” to my health, I’m 62, have no issues with my cholesterol or signs of blocked arteries but it could be genetics who knows. All I know is anything natural is the best and nothing will change that and I eat meat, potatoes and veggies every day.

She also always said while opening Christmas gifts, "now remember girls one of those Christmas presents is your birthday present". To this day I'm a firm believer that birthday presents should not be wrapped in holiday paper. I think getting a nice cake like this would be heavenly!

Just a hint of what I’ve found out. The straight edged wooden spoon is a game changer. I rarely use anything else now to stir a pot … and the best thing is. It’s not plastic or silicone
Just keep one for sweet cooking and one for savory cooking. Onion and garlic adsorb into wood. You don't want your sweet foods tasting like onions or garlic.
Helpful hint. Line the 9 x 13 with parchment paper leaving overhang (wings) on all four sides. No need to butter. When completely cooled, lift the fudge out by the wings and cut into pieces.
I do parchment paper, but my mother always buttered the pan before putting in the cooked fudge. This lovely cook does a mix of modern and traditional. I'm not surprised, since it is an old family recipe. I loved this video.
I don't know how you get it to 244 in 30+ minutes. I go to 248 and it takes 3 hours, give or take a minute. I do not use a whole bottle of Karo syrup, just 1 cup. I also put in 1/2 of water. I add chopped walnuts or pecans during the beating stage.

We never had a thermometer growing up. We cooked it to the sift ball stage. You drop a bit into a cup of cold water and when it forms a ball you can pick up and mold with your fingers, it is done.
My thoughts also. Mama never had a thermometer , but cooked to the soft ball stage. This was in the 1940s and 50s. I'm pretty certain her recipe was from back of Hershey Cocoa can and it did call for butter. It was also "hard" fudge ,but made with cocoa . About 2 times out of 5 the fudge would fail,not harden. This was, I'm sure,due to humidity in Fla. We didn't care much, still enjoyed every bite. Kudos to the young lady for her very good teaching ability. Every time we have traveled in past 40 years there has been a fudge shop at all tourist desinations.We were always hopeful to find real hard fudge,but no one does that commercial ly anymore,it's all soft.Good ,but not what we've been seeking. So nice to see tradition being kept.

So far so good, still whipping. My induction (glass top) stove...SO slow on low. Took over one hour before it was ready to come off the burner. Tasty just the same. I could use a little advice though,and very tired of stiring😊
This is a great recipe and I cannot believe I never came across this one. The very best recipe, my favorite is Hawaiian candy. Made with crushed pineapple and heavy cream. One of those very touchy fudges. Any small mistake can ruin it. The recipe was passed down thru Mom's family. I have only seen it published once in the Joy of Cooking.
My mom would always save her empty butter wrapppers, then use them (with a little extra butter on them) to butter up her pans when the recipe required it. Kept her hands clean and it was already a buttered surface with which to work. I love and appreciate how her generation never wasted anything. I shall attempt this recipe in her memory. Very similar to my Highland grandmother’s recipe for Scottish Tablet ~ apart from the ‘American’ Karo Corn Syrup. (125g Scottish salted butter, 1kg granulated sugar, 1 cup full-cream milk, 400g tin condensed milk). My grandmother used a wooden spoon to beat the mixture 💪~ I use my KitchenAid mixer like you and there’s always a queue to scrape the residue left in the bowl 👍🏴👍

I didn't have all the utensils and ingredients, and didn't want to go out shopping on Christmas Eve, so I 'adapted' the recipe (i.e. winged it and hoped for the best!). Whether by luck or judgement it seems fine (even without the help of a cute little dog!). We call ours Buttercream Fudge. Delicious. I personally use golden syrup not corn syrup bc I'm allergic to corn and corn products. The secret is not to overwork it at the final stage or it will get crumbly not creamy. Also, we add flavouring to ours, like vanilla, or maple.
@@karensilady5729 It's made from sugar. In Canada, the brand I use is called Roger's Golden Syrup and is sold at The Real Canadian Superstore in both the baking aisle and where pancake mix and pancake syrups are, next to corn syrup. Corn syrup has an aftertaste and golden syrup does not.

Scottish Tablet! Idk why they call it that, but… I make it every year now (discovered it several years back). It is basically the same but fewer ingredients: butter, sweetened condensed milk, sugar. This stuff is delicious. Drop a wee cube into a cup of hot tea 😉

This is such a rich and decadent treat for the holidays! No not healthy, though remember, it’s not for every day and you shouldn't be eating a lot of it. This is a celebratory food for the holidays, so enjoy it once a year and have something to look forward to. A CUTTING TIP …using a knife dipped often in warm water helps keep to the cutting lines looking nice and crisp. I've also used greased parchment paper in the pan, then when the fudge has set, turned it onto a cutting board, peeled off the parchment, and sliced. My family really enjoyed it, when I made this first batch to practice it. Thanks for sharing.

When dumping the hot mixture into the mixing bowl, you can place the bowl in your sink, put the pot on the counter, and then pour it into your bowl. (She had a helper.) 2.) When scraping the mixture from the mixing bowl into the prepared pan, pull out a kitchen drawer (you can line it with a baking sheet or a towel, for spills), place the bowl on the edge of the counter, and scrape the fudge into the pan below. Side note: knowing me, I would definitely press some toasted pecans into the top of the fudge! Oh, my!! 😋

When scoring the fudge at the end with a knife, dip the knife in hot water between scoring and you will get a nice smooth cut! Tip from a much older fudge maker. 😊
Hi Cara, You did an excellent job on this video. My Aunt Marie made Oxy Fudge. It's made exactly the same, but you add 1 1/2 bags of semisweet chocolate morsels, a dash of salt and 1 tsp vanilla. Let's make me clear. All fudge is butter fudge coz it requires butter in all the recipe, but it will be called chocolate fudge if we add cocoa in it, it will be a vanilla fudge if we add vanilla extract in it, it will be salted caramel fudge if we add salt in it, it will be matcha fudge if we add on matcha powder in it, correct me if i am wrong..
Real butter is good for us. Do not listen to the lies we have been told. So everyone eat butter. Just make sure its pure. Not saying the sugar is great.
Our bodies don't know how to process all of the oil in margarine. The human body was developed drinking breast milk and other animal milks. Butter is healthier for sure but like everything else, everything in moderation.

This looks like it would taste like the Scottish Butter Tablet that we fell in love with, when we went to visit relatives over in Glasgow. If it is, you can purchase it already made at the Scottish Gourmet on line. I have to purchase it, I find I eat to much of it when I make it myself. And yes, Kerry Gold is the BEST REAL BUTTER out there. Thank you so much for sharing, and thank your relatives for allowing you to do so. Our family fudge recipe is also made using Kerry Gold, since ours is chocolate, we use Cadbury’s Milk Chocolate Bars. We haven’t been given permission to share it. . . . YET. :-)

This is how my dad made fudge in an electric skillet, except we would add cocoa and sugar for chocolate, and pb for peanut butter and marshmallow fluff fudge. It was so yummy. We never used a mixer at the end, will have to try that!

We never had a thermometer growing up. We cooked it to the sift ball stage. You drop a bit into a cup of cold water and when it forms a ball you can pick up and mold with your fingers, it is done.

My thoughts also. Mama never had a thermometer , but cooked to the soft ball stage. This was in the 1940s and 50s. I'm pretty certain her recipe was from back of Hershey Cocoa can and it did call for butter. It was also "hard" fudge ,but made with cocoa . About 2 times out of 5 the fudge would fail,not harden. This was, I'm sure,due to humidity in Fla. We didn't care much, still enjoyed every bite. Kudos to the young lady for her very good teaching ability. Every time we have traveled in past 40 years there has been a fudge shop at all tourist desinations.We were always hopeful to find real hard fudge,but no one does that commercial ly anymore,it's all soft.Good ,but not what we've been seeking. So nice to see tradition being kept.

So far so good, still whipping. My induction (glass top) stove...SO slow on low. Took over one hour before it was ready to come off the burner. Tasty just the same. I could use a little advice though,and very tired of stiring😊

This is a great recipe and I cannot believe I never came across this one. The very best recipe, my favorite is Hawaiian candy. Made with crushed pineapple and heavy cream. One of those very touchy fudges. Any small mistake can ruin it. The recipe was passed down thru Mom's family. I have only seen it published once in the Joy of Cooking.

This is called TABLET, and it’s a Scottish recipe . Still made the old fashioned way using condensed milk in Scotland
No Tablet is different because of the sweetened condensed milk. Ends up different taste and texture.

Butter is VERY good for you!!! Don't let anyone tell you it is not! Its the sugars we consume that are not good for humans.
Use good cane sugar. Don't let white refined sugar in your house. It's good for you but it's still sugar and it's not as sweet.
Unless you have high cholesterol.
Corn syrup is the culprit.
My mom would always save her empty butter wrapppers, then use them (with a little extra butter on them) to butter up her pans when the recipe required it. Kept her hands clean and it was already a buttered surface with which to work. I love and appreciate how her generation never wasted anything. I shall attempt this recipe in her memory. A sincere thank you to you and your family for sharing it.

The best thing I've ever learned about fudge or candy making in general is to make it on a day with low humidity. I have a terrible time when I try to make when the humidity is high. :-)

Absolutely vital information. Humidity changes the H2O ratio, ending in sticky, gummy, UN-set candy, which is NOT fudge.

Very similar to my Highland grandmother’s recipe for Scottish Tablet ~ apart from the ‘American’ Karo Corn Syrup. (125g Scottish salted butter, 1kg granulated sugar, 1 cup full-cream milk, 400g tin condensed milk). My grandmother used a wooden spoon to beat the mixture 💪~ I use my KitchenAid mixer like you and there’s always a queue to scrape the residue left in the bowl 👍🏴👍
Question...is condensed milk the same as sweetened condensed milk?

I didn't have all the utensils and ingredients, and didn't want to go out shopping on Christmas Eve, so I 'adapted' the recipe (i.e. winged it and hoped for the best!). Whether by luck or judgement it seems fine (even without the help of a cute little dog!). I personally use golden syrup not corn syrup bc I'm allergic to corn and corn products.
The secret is not to overwork it at the final stage or it will get crumbly not creamy.
Also, we add flavouring to ours, like vanilla, or maple.
What is golden syrup made from? I have heard of it but never spoke with anyone who has used it

@@karensilady5729 It's made from sugar. In Canada, the brand I use is called Roger's Golden Syrup and is sold at The Real Canadian Superstore in both the baking aisle and where pancake mix and pancake syrups are, next to corn syrup.
Corn syrup has an aftertaste and golden syrup does not.

I always use a wooden spoon for stirring making any kind of fudge, and a buttered glass dish to pour it into. Also on a non humid day.

Scottish Tablet! Idk why they call it that, but… I make it every year now (discovered it several years back). It is basically the same but fewer ingredients: butter, sweetened condensed milk, sugar. This stuff is delicious. Drop a wee cube into a cup of hot tea 😉

A CUTTING TIP
…using a knife dipped often in warm water helps keep to the cutting lines looking nice and crisp. I've also used greased parchment paper in the pan, then when the fudge has set, turned it onto a cutting board, peeled off the parchment, and sliced.

A couple of tips:
1.) When dumping the hot mixture into the mixing bowl, you can place the bowl in your sink, put the pot on the counter, and then pour it into your bowl. (She had a helper.)
2.) When scraping the mixture from the mixing bowl into the prepared pan, pull out a kitchen drawer (you can line it with a baking sheet or a towel, for spills), place the bowl on the edge of the counter, and scrape the fudge into the pan below.
Side note: knowing me, I would definitely press some toasted pecans into the top of the fudge! Oh, my!! 😋

My Aunt Marie made Oxy Fudge.
It's made exactly the same, but you add 1 1/2 bags of semisweet chocolate morsels, a dash of salt and 1 tsp vanilla. It's a killer 😋 So rich you know you need a workout after 2 pieces! Rick is diabetic so I haven't made it in several years.

Let's make me clear. All fudge is butter fudge coz it requires butter in all the recipe, but it will be called chocolate fudge if we add cocoa in it, it will be a vanilla fudge if we add vanilla extract in it, it will be salted caramel fudge if we add salt in it, it will be matcha fudge if we add on matcha powder in it, correct me if i am wrong..

Our bodies don't know how to process all of the oil in margarine. The human body was developed drinking breast milk and other animal milks. Butter is healthier for sure but like everything else, everything in moderation.

Oh I definitely ate a lot of it haha. It is very similar to scottish tablet, but softer without any grain texture. At least that has been what the tablet I’ve tried has tasted like. 😊

Our family fudge recipe is also made using Kerry Gold, since ours is chocolate, we use Cadbury’s Milk Chocolate Bars. We haven’t been given permission to share it. . . . YET. :-)

This is how my dad made fudge in an electric skillet, except we would add cocoa and sugar for chocolate, and pb for peanut butter and marshmallow fluff fudge. It was so yummy. We never used a mixer at the end, will have to try that!
