No Oven, Eggless Almond Cake | No Oil/Butter, No Maida, No Refined Sugar | Healthy, Easy Almond Cake

- Today we are going to whip up a healthy no-oven almond cake! Made with whole wheat flour, this cake is eggless and free from refined sugar. Due to popular demand for no-oven baking recipes, we’ll be baking this cake in a pan, no oven needed. This easy and convenient method is perfect for everyone, no matter your kitchen setup!
Ingredients:
1 ¼ cups milk
1/3 cup chopped soft dates (I'm using Medjool dates)
½ cup almonds
¾ cup whole wheat flour
1 tsp baking powder
¼ tsp baking soda
1 tsp vanilla extract
Chopped or flaked almonds (for topping)
Instructions:
Prepare the Date-Milk Mixture:
Add 1 ¼ cups milk and 1/3 cup chopped dates to a pan.
Cook over low to medium heat for 3-4 minutes until the dates become tender and soft.
Remove from heat and let the mixture cool completely.
Once cooled, transfer the milk and dates mixture to a blender.
Blend until smooth and creamy. Set aside.
Make Almond Flour:
In a blender, add ½ cup almonds and grind into a fine powder. Set aside.
Mix the Dry Ingredients:
In a medium-sized bowl, combine ¾ cup whole wheat flour, 1 tsp baking powder, and ¼ tsp baking soda.
Add the almond flour to the dry mixture and mix well.
Add the milk and dates mixture to the dry ingredients.
Stir in 1 tsp vanilla extract.
Mix gently until everything is well combined.
Prepare the Cake Pan:
Line a cake pan with parchment paper.
Pour the batter into the pan.
Tap the pan a few times to settle the batter.
Smooth the top with a spatula and sprinkle chopped or flaked almonds over the batter.
Bake the Cake:
Preheat a large pan by placing a small stand inside and cover it. Heat on low for 10-15 minutes.
Place the cake pan on the stand inside the preheated pan, cover, and bake for 55-60 minutes on low heat.
Allow the cake to cool completely in the pan.
Once cooled, remove from the pan and serve.
Enjoy your healthy, oven-free, almond cake!
Oven Baking - bake the cake in a preheated oven at 180°C/ 350°F for around 45 min.

I noticed that some people are concerned about pan getting burned. Here we are using pan as a baking vessel. So any old pan, of any shape, size, material with a proper lid, which can accommodate the cake pan and doesn’t allow air to get outside, can be used to bake. Just make sure the pan is thick and heavy.
I happened to have a nonstick pan, which I’ve been using from last 6 years to bake such cakes and cookies, using the same method. And it didn’t affect the coating as it’s a slow low heat cooking process. Hope this helps!
True. I use our old pressure cooker and nothing has happened to it. One needs to bake at low or medium-low heat. I dont use salt or sand coz both get into the cake as it bakes, no matter how high the stand is. 🙏🏼
It is not good for health to heat the empty non stick pan.

You make such lovely recipes. Just one suggestion. You are still young...please discard non stick ware & replace with aluminium for baking & cast iron or normal iron for normal cooking. A little healthy fat/oil is better than no fat/oil cooking in non stic ware.

I think that is just an old vessel to bake the cake on stovetop..i am also using my old nonstick pans for the same..no direct contact with food btw..❤
@@dellajose7008 at such high heat, the chemicals releasing from this cookware may enter your cake while it's baking. If passive smoking, gad inhaled from automobiles can adversely affect our health, there may be some amount of the chemical leaching in while baking..why risk it?
Plus I've seen non stick cookware being used in all her recipes, that's why i thought of mentioning.
Anyways it's ultimately a personal choice.

Looks to me this cake is steamed, not baked in the oven, but no water was added in the pan. And you can have it dry “baked”, on the stove for 60 minutes without burning ? That is amazing 😮!

Very nice recipe. A tip...always use salt in your baking vessel, else over time the vessel will get damaged. Also salt helps even distribution of heat.
Adding 3-4 spoons of curd enhances the texture & taste. Also adding Cinnamon & pinch of nutmeg powder enhances both aroma & taste

@@kinnuchhutkujchhotu3037 need to add fat for softness...either vegetable oil, butter or ghee. Personally i use ghee. Ideally quantity is 1/4th cup of fat for every cup of flour, but you can always add less.
Curd also makes the cake soft. Using full fat milk is another form of fat.
You can experiment with each & decide your preference.
Personally i use bit of ghee, curd & milk.
If you are a beginner or experimenting new variations bake in small bowls with only 4 tablespoons or 1/4th cup flour & add ingredients proportionately.

Easy recipe with things people can easily get instead of things like almond flour .i love the recipe idea.i love almond recipes but i prefer to combine it with something like flour and i couldnt really find those recipes.it looks pretty good.and i forgot to say its healthy and vegan.i prefer vegan pastries and which are healthy.but what does it taste like?it seems like you can do a carrot cake with it.

Thank you! I haven’t used air oven for baking cakes. Although you can bake it in a conventional oven at 180°C/350°F for around 40-45 minutes.
No oil , butter , white sugar or even little salt , but outcome is great , will try soon.!
