Baked Blueberry Mascarpone French Toast-Perfect for a Weekend Brunch or Holiday Breakfast-Delicious!

- Baked Blueberry Mascarpone French Toast
French Bread Loaf
cut 8 slices 1/2 inch thick, then cube
cut 10 slices 1 inch thick, set aside
2 cups fresh or frozen blueberries
16 ounces mascarpone cheese
1/2 cup confectioners’ sugar
8 eggs
2 cups half-and-half cream
1 cup whole milk
1/3 cup granulated sugar
1 teaspoon vanilla extract
additional confectioners’ sugar to sprinkle on top
pecans,or any nut you like, to garnish
In a greased 13” x 9“ baking dish, layer bread cubes then blueberries.
In a bowl, beat the mascarpone cheese and confectioners’ sugar until smooth. Drop by tablespoonfuls over the cubed bread and blueberries. Layer with the 1 inch cut bread slices.
In a bowl, whisk eggs, cream, milk, granulated sugar, and vanilla. Pour this custard over the bread. Cover the baking dish and refrigerate overnight.
The next morning, preheat oven to 350°. Remove the French toast from the refrigerator while the oven heats. Place the baking dish on a foil or parchment paper lined baking sheet pan.
Bake, covered, for 30 minutes.
Bake uncovered for 30 to 40 minutes longer, or until the toast is puffed and golden.
Allow to stand a few minutes before serving. Dust with additional confectioners’ sugar and sprinkle with nuts, if desired. You may also want to serve with additional blueberries on top.

I had this several years ago but it was made with cream cheese and served with blueberry syrup. It was sooo good! Actually your recipe could also be used as a casual dessert! Yum! Makes me want it again! 😊

I love this. Will take it to our next church breakfast. I make a similar baked French toast with brown sugar and Cinnamon. I found that if I dip my bread slices in the egg and milk mixture before putting them in my pan it works great. Then just pour the rest over top the way you did.
@Annie-so2kk, dipping each slice in beat up eggs and milk or half and half or whipping cream is how my granny taught me to do it. She then would grate a cinnamon stick over the side of the bread that was not facedown in the pan. Then she would cover the pan with a lid and the bread would plump up so thick. She always used French toast sliced bread from the bread isle if she was in a hurry and didn't make her own French bread. My grandmother made everything homemade. Also, just an FYI, my granny would put whatever she had left of that cinnamon stick up and save it to use the remainder. Sometimes she didn't have any left, due to how many slices she cooked.

Watkins has wonderful products. My mom always used Watkins extracts (and they have SO many flavors) and she passed that love onto me. You can order online but several stores now carry the vanilla.

I was just wondering if you've ever tried using heavy whipping cream instead of the half and half? I make a cheesy potato dish my grandmother taught me to use and she always used whipping cream instead of the half and half. Reason being was it gave everything that something extra taste and made it just so yummy. I'm going to make 2 dishes of your recipe and on one I'm going to replace the half and half and use the whipping cream and see which one my kids ( grown kids that come and eat) like better.
I can't wait to try your recipe. I love French toast and I know this will be a hit with my adult kids when they come over on the weekends to eat.

This looks amazing. I have traditionally served a dinner buffet on Christmas Eve for the family. People come and go at all different times, it gets late and we miss Church services. Plus, I’m getting older and it’s getting harder to do. So my remedy this year is a Christmas Eve brunch. This dish would be perfect. I think I would cut the 1” bread slices in half to make it go a little further. I will have other breakfast casseroles and quiche on the table too. What do you think?

I bet that would be good using peaches instead of blueberries or maybe strawberries. Does anyone know if this can be frozen instead of refrigerated? I’m thinking it would be great to place in dishes for two or four servings or maybe even individual servings; maybe in ramekins.
Oh my gosh does that look and sound great! I'm having a brunch this weekend and I think I will be serving one french toast casserole with blueberries and one with strawberries. Yum! I think I’ll make the custard in the bowl of my mixer. That way I ‘ll absolutely get all of the mascarpone and sugar.
My son and I went to Brownstone pancake factory for Sunday breakfast. We had waffles and chicken, coffee and lemonade. When she brought me the bill it was 68.00 with a 14.00 dollar tip it came to 82.00. We are at the point you have to make your own meals at home. I will make this dish for the family.
Yes you do have to start eating at home it's so much cheaper. 95% of our meals that I fixed for my husband and I are eaten at home. What I do is I buy when it's on sale, my meat such as, boneless skinless chicken breast and salmon in bulk, cut it up put it in my food saver storage bags the kind that sucks all the air out and freeze it! Take out one package unthawed in the refrigerator and fix my meal along with my vegetables and sides. I watch a lot of cooks on UA-cam and it has helped me tremendously to make my own dishes at home. Even sometimes I will try to re-create dishes that you get from nice expensive restaurants. I watch Collard Valley Cooks, Catherine's plates, Laura in the Kitchen, Paula Deen and of course Tom and Melissa, Come Sit at My Table. Try it you will enjoy it and save yourself tons of money! 💰💸💳
