May I suggest, next time, fill a spray bottle with some apple juice and some apple cider vinegar. Spritz the pork every hour or so before the foil. While I would have added hickory or cherry chunks to it and perhaps spritzed it with a 50/50 apple cider vinegar and apple juice mix, I’ll have to admit you did a good job with the Jumbo Joe. I might look for a smaller bone-in shoulder and give it a try. The water pan adds moisture as well as moderates the heat. 👍

Pulled pork is under estimated. Cheap and delicious. I prefer mesquite smoked pork.
