Well another good job. Your wireless proves you need a SMOKE probe. I use SMOKE on my 18,22,and and 22. Keep up the good work. Say have you tried smoked fried applesauce with a bit of pecan wood. Oh man it is good.

Do the jumbo Joe's now come with heat reflector for the handles? I noticed some have it ...and others do not

It would be less chewy if you made it a little rarer. Cook it blood rare, then sear it at the end.
