Sicilian Scacciata: meat or vegetable pie recipe

  • On this episode of You, Me and Sicily we show you step by step how to make two types of Sicilian Sciacciata or Schacciata (vegetable and meat pie). For this we stop by our friends Francesca and Graziella's shop and use their recipe for meat and vegetable pies. Ingredients: tomato sauce, olives, cheese, olive oil, salt and pepper and any type of stuffing like spinach, cauliflower, broccoli or ground beef or pork.

    What a wonderful video! I love watching the lady made the scacciata. My family has never made it or heard of it. However, we make caciocavallo. I saw that was one of the cheese options.

      In the 1960's I shared schiacciata at my school when I was young, my family made simple recipe my sicilian grandparents made it.

    I have family in Sicily and lived there twice. Rosa would make a big rectangle one with potatoes broccoli and white cheese !!

    Francesca and her daughter are amazing! She makes it all look so easy just flowing along and assembling that magnificent Scacciata! All of them are fantastic. What ingredients! And they look so beautiful before she even puts on the top crust! I will have to try this recipe. Hopefully the recipe is on your web site.I would also like to know what is in the potato one! I saw the spinach and the broccoli but not the potato filling!! I think I would try the spinach one first! What a wonderful video to start the New Year. Thank you so much Eszter and Alfred! I wish I could reach into my screen and take some of those to eat right here!!

      Thank you Paul! She puts 1 raw sliced potato on all of them regardless of the other ingredients. The recipe is easy if you buy ready made dough, then just follow the video with the ingredients . The amount of vegetables or meat is up to you ! Happy New Year !

      Thanks Eszter. Yes I watched three times and wrote down what she put on the Scacciata each time so I have it ready. I was hoping to get her likely SECRET dough recipe! I always make my own dough - do not like store bought. I assume she is using a pizza dough? I will try the recipe with my favorite pizza dough and see. So wonderful to watch and I wish I were there to meet Francesca and her daughter and to TASTE those amazing Scacciata! Thanks for your wonderful videos.

      ​@@wandsandwizards Yes pizza or bread dough for bottom and top layer ! Ingredients: veggie of some type (abundant because it cooks down), chopped black or brown olives, chopped scallions (or onions), chopped tomatoes (from bottle or a can is ok) with olive oil and salt, one small sliced potato (optional) , then you can put some type of meat or not, drizzle with olive oil and put sliced cheese (pepato fresco, caciocavallo or provolone on top of it all. Bake for approximately 1 hour at 400. Note some water may come out while baking just for it out.

      Oh Eszter, you are so kind and wonderful to type all that out for me. I ordered the ingredients from the store for delivery tomorrow and then Sunday I will try making the Spinach Scacciata. Sounds like a great meal for a Sunday! I will add everything that Francesca did in the video! Thank you so much for your help. I will use my pizza dough recipe from my Sicilian Grandma for when she prepared Parsley and Broccoli Pizzas. That should work!

    Cool I love Scacciata! I'm going to make it for the first time today! I've seen it spelled several different ways. Do you know what the proper spelling is?

      This is how they spell it in Sicily ! Probably many other ways to spell as well!

    What a great video to have my coffee with today! Gracie!!! So much broccoli in those too. Must be a sturdy dough? I assume it’s eaten with a fork because of all those ingredients. Is it traditionally served with anything?

      Traditionally during the holidays it's eaten usually Christmas Eve and New Year's Eve as a snack along many other treats. In our neck of the woods(Catania) it's eaten for lunch any day. The pie is sliced and eaten by hand because the ingredients become solidified together !

    I would cook the sausage first. I made meat pies with raw meat and the texture from steaming was not good. And I'd brush the top with oil at some point. A delicious thing to eat. But how do you handle it?

    It's true - boiling spinach/broccoli is the worst thing you can do to it - takes out all the nutrients.

      Exactly and the fresh spinach cooks nicely inside the pie :)
