When acquiring about freezer beef, never ask a gardener. She claims 2.61 per lb. processed on 210 lbs. And she seems to think that is her finished cost per lb. 210 is the HANGING wt. NOT FINISHED PRODUCT WT. She is also referring to a "hind quarter" (there are 2 front quarters to every whole beef) Avg. "trim loss" from hanging wt. is 30-35% on a Hind quarter. A 1000 lb. steer will yield 465 lbs. of retail cuts from a 600 lb carcass. From that 600 lb hanging wt carcass 25% stk./rst, 25% GB/ stew, 25% misc.cuts (ribs, shank, neck bones) 25% loss. Aprox. Hind quarters lose aprox. 30-33% ...$2.61 hanging wt...aprox. $3.50 - $4.00 per lb on your table... That's for everything including soup,stew, and GB.
That is a great price on beef! I don't think I could justify $750. for a years worth of beef. But..I could split that with my brother and settle on 100 lbs for each of us. Thank you for the example. A slight bit of misinformation here if the hanging weight was 210 you brought home approximately 62% of that weight depending on how good it hangs how much fat was trimmed an how many bone in cuts or boneless cuts,any way you need to figure about 132 pounds of meat in the freezer,,so you actually have about 4.93 per pound and that is still a great price and a way better product
Yeah i agree the stores are a rip off on all meat these days! If that is bought from a local farm it is not a good deal at all! If your happy then congrats on your order
When a cow is quartered. The T bones and Porterhouse steaks are in the hind quarter and the rib steaks are in the front quarter! HOW DO YOU GET BOTH when you buy a quarter?
I don't know how other farmers do it, but for mine they take a 1/2 cow and split it between the two "quarters". First one to call in to the butcher gets a choice of certain cuts of steaks that only have one per half (like the skirt steak). Hope that helps.
This visual help is great. My problem is I don't know how to cook many of those cuts of beef. So we mainly stick with ground beef (versatile), stew cubes and filet (every once in a blue moon since the price is so $).
Next time I cook some of those "odd" cuts, I will make a video. Most of the thicker cuts are braised. The thinner cuts are good marinated (or just salt and pepper) and fried or grilled. As always, the fattier the piece the more flavor it has. Thanks for watching!

They get back about 50% in ground up hamburger and no more that a dozen or so 🥩 steaks!… this is DEFINITELY not for me!!!🤣… I just buy a little hamburger when I need it… and I’ll buy TONS of filet which I prefer, nice and fresh!!!. When you buy it like this, you are FORCED to eat what is there whether you want it or not!!!. Anyways… to everyone their own!!!. Great video! Good luck with your beef!☝️😃

Hi. This preference goes back to years ago when I first tried grass fed beef -- I just didn't like the taste of it. I have tasted good grass fed beef and some not so good. I like this farmer that I go to, like how he treats his animals, and it's the best beef I've ever tasted.
As of June 2024, beef is $3.45/lb. plus $.85/lb for processing based on hanging weight. They have specials there all the time on their beef where they will bundle items which is usually a pretty good deal.
I live in Southern California does anybody know a farmer that has grain fed somewhat closer. Don't mind driving 500 miles but 1100 sounds like a long drive. Thx
Hi Tamara. It was less than $750. It is grain fed, not grass fed, because I don't like grass fed beef (personal preference). In speaking with the farmer, he does not use any antibiotics or growth hormones on his cattle. He is not certified organic; however, he's very careful with his feed. These are happy cows out grazing in the field.
Here in California it is very, very illegal for a farmer or rancher to butcher out a steer and sell it to the public. A while back some unethical people were caught selling beef that had hoof and mouth.

..that 210 pound hanging weight is not what you take home....you prolly only take home like 130 pounds of ediable meat...you gotta minus blood skin bones head tongue organs....i just got a quarter that weight 185 hanging...i brang home 110 pounds of meat....so this lady paid alot more than $3.61 cents a pound

I have found the hanging weight is 60% of the live weight and 65% of the hanging weight is what u have left in cuts

A quarter beef should weigh out to 100 - 150 lbs from a 1200 lb steer or heifer. Over 200 lbs is moving into a half beef.

Normally the beef is way better quality also. Great way to do it. Also helps the farmer and the Processor. Can’t beat the price.

This meat looks like its been shrink wrapped and not vacuum packed, wont that cause freezer burn after a while?
It is shrink wrapped. I haven't had a problem as I go through it fast enough.

Find someone to buy the ground beef from you - like a local taco truck; then eat the good cuts. You’ll likely pay for your other half
