It seems you ignored the yield percentage which is apparently about 60% of the hanging weight. The 257 pounds hanging would yield 154.2 pounds for a net cost of $4.33/pound. Still a good deal and better beef than you would get from a grocery store feedlot animal.
We usually raise holsteins for our beef. Very easy to raise as they are very docile. We bred and raised Angus before and they were much harder to deal with. We personally have not noticed much difference in taste. We believe it's more what they eat than what breed they are.
Sounds like a sweet deal to me and I bet the taste is better than store bought. It's about $4-4.5 per lb for ground beef at the local market that's why we buy in bulk through a warehouse club, bring it home and portion it out. Three freezers, that's a whole lotta meat. Do you have a generator if you loose electricity? 👍
I did not see any packages of bones. They make great beef broth and it so easy to can. To get a better cost per pound you need to weigh the the bring home meat then figure the cost per pound. There is a percentage of lost from hanging weigh to bring home weigh, but still that is a good buy.

We eat mostly ground beef too. Buying it this way is always cheaper per pound but alot of cost upfront. We have not gotten that cheap though wow! Thanks for sharing.

hanging weight is not what you get from the butcher, because the butcher will debone the meat (you will get some as soup bones, but not all). On average, think between 70 and 75 percent of the hanging weight. So your hanging weight was 257 pounds. Seventy percent of that is 180 pounds, which comes down to 3,70 dollar per pound, which is still a great deal

you should get empty gallon jugs or water bottles fill with tap water and put in the freezers. then if your power went out you wouldnt loose all your meat. it would stay cold for several days like a cooler.
So what was the final weight and not the hanging weight? Fair comparison would be final weight (about 30-40% less of hanging weight) and price it that way. Probably closer to $4.50 to $5 a lb. Still a deal and more control of what it was fed and how it was raised.

We love our butcher! This is where we take our pigs as well. They are a little higher priced than others in the area as well. But they are super close to home and we are super happy with product!

Yes, this all comes vacuum sealed from the processor. Vacuum sealing is a great way to keep meat in the freezer as it helps to keep freezer burn off. Canning meat is another great way to preserve meat for longer time frames.

I hope the butcher didn't throw it away because it would make me sad to hear good food go to waste and what do the butcher do with the head,feet,stomach,intesines of the pig too......just wonderin is all
Liver and tounge we get back. Or we did last year. I think they went with the other half this year? As for the rest I can't tell you. And of course when you take an animale to the butcher, your at that butchers mercy as far as what you get back. Now, to be honest, I will try ANYTHING (almost) but most of what you listed does not sound that great to me :)

So I assume the same for a cow?? But now you have me wondering about orders that are specifically for a half an animal .... if they split and weight ... but as that would be more time consuming .. You can't compare price per pound hanging weight with cost of meat in store because you don't actually get that many pounds once it is cut up. Not criticizing. Just stating a fact since we used to raise beef cattle.

If you think your sold then ask to come take a look at their operation. No need to argue with them, if you like what they do then GREAT! Go with them. IF you don't, say "no thanks" and check in on the next farmer. Pork, we may have some available soon. We have 2 pigs we have been slowly growing out on grains (barely, sunflowers, oats, alfalfa pellets, and just now mixing in cracked corn) but NOT commercial feed. All "grains" are NOT organic and NOT non-gmo. If interested please email us. Not promising anything ... and prices are gonna be elevated since we have been feeding them about a year now and they need to grow more. Chickens. We are planning a spring batch. Samething. Email for some info. This entire spring batch will be sold, we will not be keeping any ourselves. Chickens are free range as much as we can. They are NOT cooped up and crowded in. We have some reserved already, but looking to maybe do a total of about 50 - 75 birds in the spring.

I dont think jersey yields 60 percent its more 50-55 at most
I hope the power company doesn’t have issues keeping the power on. One or two days without electricity could destroy the freezer contents.

I am totally amazed at how much 1/2 a cow brings in! We are in cattle country..Will have to ask around if any neighbors want to go in halves with us!

Wrapped and packaged weight is around 40% of hanging weight usually so actual cost per pnd on tge table is twice hanging weight cost.

Yeah, the upfront can hurt, but rewards in the long run. I feel lucky we are "in" with this farmer now!

Yeah. There are other farmers selling at $3-4 in our area as well. Espeically if Grassfed it can go up even more. I'm real happy we found this farmer.

Yes. It all seemed to work to the cut sheet at least and the hanging weight. It was a smaller cow though.
We had a half done and got like 220 lbs of ground
Don't know how good your butcher is but $.60 a pound is a steal. We are paying $.90 on average for processing here and it isn't always the best.

You couldn't stay in business as a beef provider at those prices if they're being raised for premium taste and texture.
