I found the best food in Greece in Crete, Thessaloniki and east Macedonia. About the wine, whet can I say? Agiorgitico and Moschofilero in Peloponnese, Xinomavrobin west Macedonia, Limnio and Moschato on Lemnos, Asirtico on Santorini, Fociano on Icaria, Rosaki in Kavala and so many I can't recall now.

I want to go on holiday there and eat at that restaurant every night for two weeks. The salad was a work of art. Zoran, skip the pork and plenty of lamb please. 😍

Absolutely not, what you see in video is required for best results in making Antikristo, an item that we prepare at rate of 50kg per day this period. A real Fleur de Sel (άνθος αλατιού) does not have the salt quantity low quality granulated salt has, if I threw simple coarse salt in this amount I'd 😂 kill someone. However, that generous amount of the most expensive salt does NOT apply to any other food item we have, only Antikristo and maybe roasted bread that we serve. This kind of salt is full of salt sensation while, due to its foamy molecular structure, contain some 30-50% of the salt technically. Our food beside Antikristo is not too salty at all. WE DO HAVE our problems but those related to a strict policies that we apply, reservation REQUIRED, NO large groups, NO smoking or vaping inside/outside, YES dogs, cats, snakes and monkeys but NO to feed them in premises, OBLIGATORY listening Mikis Theodorakis music but NO music wishes and so on, and so on.. Biggest complains? Smokers! Their food is sour, bitter, chilly and expensive. See? The salt actually might be the slightest trouble.

This is contrary to what famous Asado Chefs think when they frequently end up to eat here but you're right (in a way). I could have built huge house with money I spent to wood in years. Open fire makes only 700kw per m3 of hard wood approximately, in my case probably over 1000kw because of glass around, both compared to stove that delivers 2000 to 3000kw depends on wood. But all our mathematics go to the garbage when we eventually face oncologist. Antikristo toxic and carcinogenic backfire to the meat in smoke extraction scenario like this is close to zero. That plays role if and when the final bill comes and we understand that 😂 "wood was actually cheap". It just looks inefficient, nomads are doing it, Eskimos are doing it, Bushmens are doing it, Nordics are roasting fish on a wood plates the same way traditionally..

They were the first exporters of olive oil in the history as far as I know, and the food is just incredible. Olive oil is top quality as well.

Yeah best thing is the fatty parts in lamb. Otherwise the taste is bland. Antikristo as a dish is very ancient and prevalent in the mountains.
