In South India we used get this in freshwater and we don't deep fry in in oil. It is the best fish for fish curry it emits some kind of oil to curry and gives good taste and smell.
It’s in Taiwan, but the BBQ eels are cooked in Japanese style in this video. There are two main ways to eat eels in Taiwan in my town. One is to cook whole eel in herb soup. One is to deep fry eels like fried chicken and dip them in sticky soup.
I am from malaysia. This reminds me when I was young I used to catch eels in the padi fields, sometimes used hooks sometimes drained away a small pool of water in the middle of the fields after padi had been harvested. Among the eels, there were snake headed fishes and catfish. All were fresh water fishes. All grown naturally. We used to cook them with chlli and coconut milk. Very tasty and nutritious.

Eels looks terrifying to me, not used to this kind of seafood. But I heard from (many) people that it's one of the tastier seafoods in asian cousine. Some people particularly said that eel sushis are very delicious. Is it worth trying?
