ONE IMORTANT TIP If you use cheap whiskey it will curdle. It depends on the acidity. The cheaper stuff has a lower PH. I used to bartend - that's why I know this.
I like the recipe, simple ingredients, and simple instructions. It's going in my recipe folder. After I started drinking Carolans Irish Cream, I find the Baileys has a more chemical taste to it. I can't describe it, and it's been a while since I've tried some. It would be interesting to have a taste test with all the different brands of Irish Cream and see which ones have the best flavor.
@@PBGetson If you are wanting a good taste-test of the store bought, definitely get a bottle of McGuires. It's very cheap and to me it has more flavor than baily's with no chemical taste. Dugans is similar.
@@PBGetson I saw a video on that here on YT awhile back. They tested Carolans & Baileys against 2 homemade recipes; 5 people were the judges. All was in unmarked bottles. All 5 judges preferred the homemade recipes. I thought that was very interesting. Sorry, I don't have a link or remember the channel. Cheers!
I was given a recipe for Irish cream about 25 or so years go and I have to say it pretty much mirrors that one, the only difference is that we don't have the half and half in Australia so I just use pouring cream. My problem with it is it just tastes so damn yummy that it doesn't last long. One tip I was given is to use a good quality whisky.
We’ve made this several times for years ,warm up your sweetened condensed milk in the opened can in some water ,very low boil ,never thought about the coffee, sounds good, this is soooooo much better than store bought,You’ll never buy store bought again ,we use Captain Morgan’s Rum ,Makes A Great Gift ,Thank You For Your Video!!!
I made a quart of your brew this morning and put some in my daily coffee routine. This recipe goes on an upper cabinet door. BTW, I used Jameson's Black Barrel to get the right amount of Irish in the mix. Top Shelf......especially for breakfast.
I remember my 6th grade Irish teacher always walking around with what I now think was Irish coffee. Poor thing she was so shaky n run down looking. I love Bailey's but it's so expensive. I'm definitely going to try this. DRINK RESPONSIBLY PEOPLE!!!
Thank you for explaning what half and half is. We don't hve this in the uk. Wish we had. And, thank you for telling us how we can make our own. Americans really are blessed. You are very good at teaching. Thank you.
It literally means "water;" the word is derived as a part from the Irish Gaelic translation of the Latin phrase "aqua vitae," meaning "water of life," and which was the generic expression for alcoholic distillates. That's because the expression was carried over to Ireland by the Catholic monks who brought the art of distillation to the island, along with their religious practices, from the birthplace of both: the Eastern Mediterranean. But the Irish monks both turned the phrase into Gaelic and created a new spirit altogether.
I’ve loved Tod’s recipe for this for years! I always bottled it up real pretty & gave for gifts. I LOVE adding Club Soda in my glass about 1/2 way & finishing the rest with this Irish Cream. Deeee-lish...
I made this recipe last week. I used Canadian Wiskey as it was 4 bucks cheaper than Jameson. I used the half and half and whipping cream. Before you add the booze whisk the booze in slowly and keep whisking until it’s all in. Whisking in small steady streams as seen on the video. I used the no name chocolate syrup, you will find this beside the nestle quick in most stores. It tasted better the next day and days after. I also preferred to use more coffee to taste. Fridge life should be a few weeks, I am on 2 weeks. When you take it out of the fridge just lightly tip the bottle to move the liquid around, don’t shake it, like crazy. This stuff only gets better with time and it is comparable to the name brand. You might never buy it again and only make it yourself.👍🏼
Thanks for the detailed comment. The additional information, especially from first-hand experience, should be very helpful to others. A very good comment. Much appreciated. --Dennis
I've been making this Bailey's recipe for more than a decade and it taste as good as you would imagine. Same recipe (Instant Coffee) I just use a Blender instead of whisking. Great Share!
Thank you for the video. It looks simple enough to make. I will definitely try to make my own because I love Bailey's but it can get pricey store bought. You are enjoying your Bailey's drink so much at the end of the video that I was wishing it was me savoring it. LOL 😄
Made this last year and it was a big hit with the neighbors, Just made my first batch for this season up coming Holidays. Thanks again for your video. Cheers, I'm drinking a glass as I write this, soooo good.
Used to make our own similar version in the 1990's in SAUDI ARABIA the base was siddiqi which is effectively Poteen to the Irish or moonshine to the yanks. Our recipe also included raw eggs and it was fantastic.
Washington state has a 20% Liquor Tax and a 3.77/Liter Tax. I think it's the most expensive state to buy liquor in. A 750ml bottle of Jim Beam can run you almost 30.00 in some places here.
@@vondahe its not going to be pounds sterling as its worth more than the us$. Its Like £14.99 in the UK so about $19.50. Equivalent so yes its expensive at $40 plus. Aldi does one in UK for £4.99 but with wine not whisky, its ok.
So I substituted the dark chocolate with white chocolate made white chocolate Irish cream it came out so good, I also substituted cookies and cream creamer instead of half and half and cookies and cream sauce instead of chocolate my daughter (36 year old) is a cookies and cream connoisseur she loves it .
You had me curious. I put a small cup in the freezer more than an hour ago. I wondered if there was enough alcohol to act like antifreeze. It froze almost solid. I am now eating it with a spoon, like ice cream. Thanks for the idea. -Dennis
Cool! Thanks for this! I occurred to me watching that you might help with the settling problem by dissolving the chocolate syrup into the hot coffee/water.
Melanie David possibly, somewhat. But the reason it settles in homemade versions & not in commercially prepared is because Bailey's et al add a bunch of gums & stabilizers, probably a whole chemical shitstorm of additives & preservatives. Personally, I can deal with giving a bottle a shake before pouring. I'm willing to sacrifice all the added garbage. 😉 But...to each their own.
This looks delicious Dennis. I plan to make some this summer. I've made Irish cream before but my recipe called for instant coffee. This version looks much better. It's a lovely color in the bottle. Thanks for sharing! Enjoy your Bailey's!
Thanks Mea. If I had instant coffee I would have used it, in keeping with the recipe in Todd Wilbur's book. The substitution worked well enough. -Dennis
I had some Bushmills aging in my cupboard. I followed your instructions and it turned out great! The almond was a pleasant surprise. You've turned me on to a new xmas tradition. Many thanks.
I copied the instructions yesterday to make my Christmas supply. No half and half in the UK but sorted milk / cream blend. Nice one Dennis 👍⚒ A lush drink 🤪
So I only had rum, and no chocolate syrup and only normal cream. I melted 1 tablespoon of butter, used 120ml of cream and the next 120ml's of cream was a mix of milk and cream and the melted butter. I sifted in 1 tablespoon of coco powder and its like a chocolate baileys, I wasn't looking to duplicate baileys exactly just wanted something like it, and I am really happy with how it turned out. thanks Mobile home gourmet
Ya, I love 💘 to make my own liquior's. I've been doing it by myself sense i was 8 years old the day after Halloween from left over candy from 6 children. I also make flavored beer with candy and or coolaide with budweisher preferably. I only buy certain liquors because the candy is so hard to find that is vanilla smirnoff and whipping cream smirnoff. Ya, Christmas is u great time to celebrate making liquior. Dena Marshall
Great recipe will have to try it! I live in the UK and I guess that half and half would equate to our 'single cream', while heavy cream equates to our 'double cream/ pouring double'. I often use double cream to make mousses and in those recipes I always have to refrigerate the mixing bowl and whisk attachment in order to whisk at length without the mix turning to butter. I also make butter, where I leave all at room temperature. The potential to curdle comes from overheating, either form over-vigorous mixing or warm ingredients/ equipment.
Baileys I like it because of the taste & also the thickness while other creamers are not as thick honestly kinda watery compared to Bailey's. I use alcohol free Bailey's creamer for my coffee..
That same 1.75L bottle of Kirklands cost $40.00 in Calgary Alberta Christmas 2019, $10.00 less than Bailey's Irish Cream that sells for $50.00 for a 1.75L

what is it in cheap whiskey that causes it to curdle?

'Whiskey' is a Gaelic word that translates loosely to, 'nectar of life.' Just FYI. I frequently use it as coffee creamer.
Excellent substitute for milk, though perhaps not first thing in the morning.

"Half and Half" is 10% cream and "Heavy Cream" is 36% cream, or thereabouts depending on where you live. I can't wait to try this recipe.
Thanks for the tips, I’m from Australia and haven’t seen or heard about half and half...🤔
I think Half and half is what we call single cream, and heavy cream is our double cream.
I am from sri Lanka we dont get good cream whether single or heavy.
I thought 50: 50 cream and milk.mix?

When you buy Bailey's you are paying for advertising. There are many brands at half the price. Carolans is my favorite.
sly pen - Carolans is my favorite also! Nice sipping' this time of year! (I prefer mine straight up at room temperature rather than chilled).
I like Carolans too, but it tastes just a little thinner than Baileys to me.

I paid $15 for the last bottle of Baily's I bought, not sure one can complain about the price. Baily's is superior.
I made this today. It tastes great.
I love it in coffee! Its the only time I drink coffee 😉
I use straight heavy whipping cream. Maybe try 1/8-1/4 teaspoon of coconut extract also my guest like the flavor 😉
