    Just FYI you don’t really have to cool down that roux that much. You can temper the milk by adding a hit of the warm roux to the milk. Once the milk is up to temp, you can add it without fear of curdling.

      Don't need to cool it at all. A bechamel is a roux plus milk and is one of the mother sauces. You also don't need to temper the milk, you can pour cold milk into a hot roux and everything will be fine. The yogurt is the real danger of curdling if added to a hot liquid but after adding the cold milk it should have brought the temp of the original gravy down far enough to add the yogurt and be ok. I'm actually in the process of making this recipe right now lol

    Two notes: 1) Don't accidentally put the tomatoes in the pan with your other veggies, and 2) I made this with chicken thighs and it came out great.

      I definitely forgot and threw the tomatoes in the same bowl with the other veggies, and also into the sauté 🤦. It was alright tho, jus cracked the heat a bit more n gave it some time to reduce the liquid.

    Thanks so much for all of your great recipes! My 18 year old son wants to incorporate more protein to complement his weight training. I asked him to pick out the recipes and to help in the kitchen. Big win for me to have time with him in the kitchen. We eat dinner and then put the leftovers in the containers for his lunches.
    I had been trying to teach him the "mise en place" concept. When you put it in terms of "get your shit together" it clicked for him. 😂
    I'm sure we will be trying this recipe soon.

    Try poaching your chicken in salsa - it add hella lot of flavor. (The 2 for one tip is poach the chicken in 1 jar salsa + 1 jar water. When chicken is poached through, remove for recipe. Add one tin of diced tomato, 1 can of beans (drained), 1 cup frozen corn. Cumin, garlic, onion power, (for the madlads: ancho chile). Serve with tortilla chips and a little cheese and you have my family's favorite soup.

    This recipe is legit. My plan was to make the salsa verde beef bowls today but I got shorted my beef on the grocery order. I had these in mind coming up and had the ingredients so I went for it. Just ate a portion for dinner and it was incredible. Thanks for the work you do.

    I made this. It's delicious. I tweeked a couple of things to speed the process up
    1) poach the chicken first with some left over vegetables. This is then your chicken "stock"
    2) brown the vegies concurrently, before making the roux
    3) prep the potatoes while the vegetables and chichen are going
    4) cook everything in the same oven

    Thanks for the great recipes. I’m just getting started cooking beyond cooking an excellent steak, and I greatly appreciated the variety of recipes on your site. As I had no clue what I wanted to cook.
    I found that it took me longer than listed, and left me with a number of kitchen items to clean. However, it turned out great.

    Thanks for the recipe. I ended up adding the tortilla step, sat aside a bit of the Roux/Queso to top the enchiladas, and just made them for dinner, also made fries out of the potatoes. They taste super good. I DO have about one of these prep servings of the mix left over. Thank you again, super good

    Just made this for the first time and it’s awesome! Had a small heart attack because the sauce smelled…questionable…when it was finished but it turned out fine. Will definitely be in my meal prep rotation from here on out.

    I will try this out for sure! A good tip on how to shred Chicken is to put them in a container, close it tight and then shake the hell out of it. It will shred by itself... Way easier and it is a good exercise as well LOL I tried it with a pressure cook pan and it worked (wait till it's room temperature of course) and as well as with a closed Tupperware.

    Dude these recipes have been so good! I’ve tried the chimichurri bowls and the spicy adobo chicken bowls so far, which both came out really good! I’d love to see your take on a pasta dish using either whole wheat or veggie pasta, ya know, for the gainz 💪🏼

    Have you considered using baking soda for potatoes (at least when boiling)? I heard it helps make them crispier. You might also want to try using better than bouillon chicken base. You can mix in 1 tsp with 4 cups of water to make a base and you'll still have much less sodium and mystery ingredients than when compared to buying a box of chicken stock/broth.

    Thanks for all these recipes, I kinda went too hard on weightloss tracking every single thing in a severe deficit and went from 250lbs to 130lbs in 1 year and kept it off from 2020 to 2022, but december 14th 2022 i lost my mind and regained 110lbs from dec 14th to august 19th, i started losing weight again on august 19th 2023 weighing in at 242lbs. Currently I'm 192lbs and i havnt been tracking i just have been eating mindfully making sure to eat lean meats and lots of veggies with a carb source

    Another quick way to shred chicken is use a hand mixer. We do this all the time making other things that need shredded chicken.

    Personally I divide the portions into aluminum trays the same size as your plastic ones, but I reheat in the oven because I find it better.

      Same. I think the next time I make it, I'm gonna put it in the oven without the cheese and just bake it longer, and later on pop it out and add the cheese. Bake it for a while longer. I didn't want to burn the cheese which is why I took it out. It was still good though.

      Cook your roux longer to thicken it to the right consistency to avoid a soupy finish just let it thicken up more

    Get a big pan with high sides, it will help you so much. Its either to small or you have no sides on yours and you have to be so careful not to make an absolute mess.

    I guess I'll try this again. It looked like I needed more butter for the roux so I added some in with flour already in the pan. Tried to add more chicken broth but it looks like creamy mashed potatoes now.

      For a roux you want equal parts fat and flour. So if you're using 1/4 cup of flour you would want 1/4 of butter or some other kind of oil. And you have to keep it moving or it will split and get the results you described. Another thing you could try is to use xanthan gum dispersed in a little bit of oil instead of a roux.
