I made this last night for dinner following the recipe in your book, it was so delicious! I had more than 30 minutes so I let the chicken marinate for two hours, and used bone-in chicken thighs instead. Will definitely be making this again and again.
I’m trying to find where to buy the spices you use or you recommend on your website but I’m not having any luck. The ones the supermarket stores sell are not the same quality. Do you have a particular brands that you recommend? Love your dishes! I am learning so much! Thank you ❤❤

I've always coveted that flat dish you use for making chapatti, flatbreads etc. Brainwave! I removed the handle from an old frying pan and I've now got something that will do the job.
This was a lovely recipe which I've made multiple times (and included onion 😉). Question, please: I never made Indian food prior to moving to the US; As an ex-pat, I've now made Indian food for a few years here in the US; The local Indian food shops offer *multiple* types of gram flour. Is there a 'typical' or 'standard' gram flour I should purchase which is most commonly used with Indian cooking? (Apologies for the vague explanation, but there are literally ~10 different types and I feel lost.)

Another tip that you can use to thicken is powdered potato. Adds no flavour but thickens lovely.

Google gave me this answer: The most commonly used Indian varieties of flour include atta, maida and besan
Atta is whole wheat flour, while maida is refined wheat flour and white in colour. Besan is gram flour used for pakora/ onion bhaji etc.
