One of my nurses, who's Punjabi, uses rapini to make saag. She says it has more complexity than spinach.
I wanted to tell you that your wrap recipes have been a hit with my hubby, who makes it, and with my son, who takes it to school for lunch. It's made a couple of times every week. And they have made it with tofu also. Thank you Chetna!

I tried this today as I had a 300g bag of spinach (no kale) lying about and it turned out delicious indeed. I had mine with basmati rice and will have the leftover with chapati tomorrow. Many thanks for sharing Chetna

Can you show us a recipe for Saag Paneer? I had it at a lovely family Indian restaurant with my father and we couldn't get enough. Delicious! I'd love to be able to surprise him with some.

Thank you, Chetna!! Saag is my absolute favorite. I can easily see myself making this with paneer or tofu as well when I'm not feeling meaty.

Looks fantastic! I've tried a number of recipes for this, and have never been happy with the outcome. This might do the trick. In the States, we can easily get mustard greens. I must just try it with those instead of the kale/spinach mix.

Great recipe! For the greens, I used gai lan instead of kale. Also, I added a heap of diced carrots and cauliflower florets along with the onions. The carrots added sweetness and texture, as well as a little visual pop to what is otherwise a very monochrome dish.

I honestly make saag so much of varying types of protein but never knew that it's originally supposed to be mustard greens. I'll stick to my easily found tesco spinach but definitely adding cavolo nero to the next one this week

Ok this is so funny… mustard leaves, which we call “mustard greens” in the US, are very popular in the Southern US. You can find them most of the year! We eat them with barbecue, but we just cook them with a bit of salt pork. I love the spicy flavor. I prefer them over spinach.
I find this funny because there are a number of special things that you use that we just can’t get here, like fresh fenugreek or curry leaves. But we have mustard greens!

Hi Chetna, thank you for this recipe and I will make it with 'on the bone' meat! Neither you nor I can buy mustard greens in the shops but I grow my own veg as the garden is closer. Can you give a more specific type of 'mustard greens'. There are many different varieties of mustard greens seeds. The Real Seeds company list 7 different ones, several identified as coming from China. None identified as from India. Elsewhere, there are also red leaved ones, which may give a less zingy green to the dish.
As you have used spinach and kale when you would prefer to use mustard greens, you have inspired me to use the greens I do have, eg any kales (dazzling blue and Cavelo Nero), chard, turnip greens. I'm always on the lookout for recipes for the veg I grow.
Now can I grow fenugreek seeds and make my own dried Fenugreek leaves?🤔😉

The traditional saag curry is usually all spinach. So yes, you can do all spinach. All kale is not traditional though, but you can try it out.
