Just made PKNY tonight and it was absolutely banging! I used a mix of plantation original dark, el dorado 8 and saint james ambre and a homemade cream of coconut. Gorgeous! Keep it up mate!
Derek, it's watching videos like these that make me want to take out a home equity loan to finish my basement into my very own tiki bar. Then stock it with every bottle I can find.
Just tried making the Sonando, but using Rum Fire for the overproof and 1.5oz of Barbancourt Haitian Proof for the cane juice rum and it was absolutely phenomenal.
These sound good, but still stand by my variation - 2 oz Plantation Pineapple rum, 1 oz dry curacao, .5oz lime juice, 4 oz pineapple, 1 oz coco real coconut cream, barspoon allspice dram, 5 drops saline, dust w fresh nutmeg.
0.4 0z Pineapple Juice is very specific and not a usual spec. Is that a typo? If not a typo how are you measuring it? 12 ml in a Graduated cylinder or eyeballing 1/2 oz (minus)
Whoa, that Sonando is out of this world. The grassiness of an unaged cane juice really lifts what could be a heavy drink. Thanks for sharing that recipe--going to be a new favorite.
@@Louzahsol can confirm - I bought it just to see for myself, and now I have a bottle of rum I'll rarely ever use (unless I can hide it in a drink somehow). I bought it because I had a painkiller made with it in Vegas, and it was good - perhaps it was a lie, but whatever... either way, it's not great.
Sonando sounds like a play on the classic (nonalcoholic) drink Morir Soñando (die dreaming), which is i think Dominican and combines orange and evap/condensed milk maybe.
Love these variations. The painkiller is probably one of my wife's top 3, so it gets played here. I like them, but can only handle 1, because of the sweetness. Also a firm believer that though classic, pusser's is not the best rum for that drink. Always changing it up.
I usually like it with 2oz pineapple juice. 4oz is waayyyy too much for me 2oz Pineapple Juice 1oz coconut creme 1oz Orange Juice 2/3/4 oz Rum (split between whatever rum I fancy) Nutmeg garnish Sometimes angostura bitters for richness My standard way of making it
You have the best Tiki channel on UA-cam without a doubt! Thanks for sharing your experience and knowledge// Painkiller has been my new favorite drink since watching but these new recipes will be fun to try!
I was literally just playing around today trying to make a frozen painkiller, mixing the Ts PKNY and pina recipe. Used Hamilton potstill black as well as Demerara was pretty nice
GREAT video ! Fan of the modernized tiki cocktail format. More please. We tried the Sonando and PKNY today. PKNY was fantastic, but the Sonando was the test department’s (wife) favourite. The Lime, Passion fruit, Vanilla and Wrey & Nephews is a magical combo. Highly recommend this.
I'm a Newey in Tiki. I'm really fascinated. One thing in don't understand yet,is all rum varieties. I get it , it's a huge category, but still, I'd love a video about what makes a rum being in one sub- category or other, basically Id like to understand how sub one for other rum , even knowing it's not exactly the same. Great channel, thanks!!
I use OneNote to keep drink recipes in (which I then access via a dedicated Kindle Fire kept at my home 'bar'), and I painstakingly copy them from wherever I can get them. I then rate the ones I've had..... after updating some ratings tonight, I have to mention that the Sonando and PKNY are some of the only to receive a 5 out of 5 rating. The Jet Pilot from your recent video is also stellar. Clearly they've affected me, why else would I be writing comments on a UA-cam video?!?! WTF am I doing?
Every time I find a recipe I like or want to try I have to buy like 5 different more bottles of rum lol. I like the original recipe so I’d be curious to,try the first one and last one.
I visited The Lost Inferno a couple months ago. It's a Goonies themed tiki bar in San Clemente. It definitely tastes like they added a little nutmeg into the drink. It was a very nice touch. All their drinks were incredible, btw.
Hey Derek - are you using fresh juiced OJ in this? Im curious if a high quality store bought OJ could hold up in these cocktails the way a fresh juice would. Im going to make the Sonando later today!
Speaking of substitutions...I still can't find Coruba and I am in Texas where you can't order alcohol by mail. What is close. My go to for dark is Diamond Dark right now.
Thanks for the video! Is there any difference between a "Guyanese" rum and a "Demerara" Rum? It would be interesting to try this with El Dorado 5 or 8. At 3/4 an ounce with the mix of other ingredients I wonder if you would even notice a difference.

You got to do what you got to do.
The Sonando with cachaça was amazing, and then i made it again with Rum Fire instead of W&N, and that was really good. PKNY tomorrow

Painkiller is the best cocktail i need more of them .
Great trio!! Will make the Sonado with Cachaça
You sure don't like the regular painkiller cocktail, and I'm here for whatever other variations you share with us 😂
Considering pusser’s rum tastes like you distilled a brown paper bag, any other rum is an upgrade. That stuff is the southern comfort of rums

Correct
That Cachaca is very similar to Copalli.
I finally made the Sonado. Just delicious. Thanks for all that you do.

4 ounces of pineapple juice always scares me away from the painkiller. So glad to try these!
Not enough juice makes the painkiller bitter.

You continue to knock it out of the park. Another great video. I have so many things on the list that I need to try. 😂
Using cachaca in the sonado probably ends up landing it near a batida
Nice to see some cachaça back in the spotlight!

Great video, I love the variations on a theme. The Chad Austin version looks fun to try- anything to put passion fruit syrup in!
Hell yeah
I’m hitting like on this video before it even starts! The original has always been way too sweet. Looking forward to this 😊
These all look Great! But boy do I really want pebble ice machine now
Another good one that I would add to list is Tradewinds :)
I use 2oz of O.F.T.D.
El Dorado 12 is my go to for Demerara
Just the right balance between sweet and aged
Wonderful video! Can't wait to make the PKNY. Also, what is the name of the song you play at the end of the video?
OG painkiller is a boring tiki drink, especially if they aren’t fresh juices (pineapple is a pain). Stoked for these!

I've had one like that. Tasted real nutty. Was delicious! Went back a month later and it tasted different. Someone else probably made it.

I don't have a strong preference. I just use what I have on hand but often it's store bought.

Worthy Park 109 with adjustment made for the higher proof.
Charles Tobias dont got nothin on Garrett Richards!! 😆

Nope. Unless I'm mistaken, DDL (demerara distillers Ltd) is the only rum distillery in Guyana.
@@LyK0sa That's what I thought too. So the Bellinger recipe calls for both an aged and an overproof Demerara rum. Cool.
