Hello Ms. Chris I must say this brought tears to my eyes because my mom was the only one that could fix kidneys or liver for me. I'm 67 years old and mom passed away about 22 years now. I cooked them every now and then when I can find them, but I enjoyed watching you cook the kidneys just like my mom used to do. My kids are grown now but they never wanted to eat them.....lol 😆 and yes I still eat and cook old school. Blessings 💖 🙏
LOL!! I am a very HEALTHY man, 82 years of age, and many years ago, when they were just kids, I used to prepared kidneys for my 3 young girls, and they ate it up with great relish!! However, these days, I suggested making kidneys to my grandaughter, the other day, and she RECOILED in absolute terror!! LOL!! She said , "Grandpa, people don't eat 'STUFF LIKE THAT' ANYMORE!!"" LOL!! Well, I STILL DO, as organ meats are very healthy for you!!...I eat beef liver as well, but my preference is for kidneys. Pork kidneys are best, but I enjoy beef kidneys almost as well. You are a GREAT COOK, Chris!! You are very precise in your careful preparation of the kidneys. I am not as careful, and still enjoy the dish. I so enjoyed your additional recipe for your gravy as well! I am going to prepare it when I make my next kidney dish! I haven't had kidneys in many many years. My mother used to cook them because they were a cheap mill and, also because my father used to loved them and we were so glad he did. My mother passed away over 50 years ago and it's hard to find some good ole time cooking. A lot of your recipes takes me back to my mother's cooking. God has blessed me to turn 74 golden years of age and I am very thankful I grew up in a time of ole time cooking and ole time living. Thank you for this video and God Bless.

it's been 55 years since I HAD THEM. But we put them in some milk for half an hour to get the urine test out before we washed and fixed them like you did. thanks for the memories

I'm sitting here watching this, and you're taking me back to when my grandmother used to prepare these beef kidneys in the 60's and 70's. I remember her seasoning and flouring them just like she did her chicken (like you said). My husband saw me watching this video and did a double take - he said that his mother used to prepare these when he was growing up, too. I remember trying to find some years ago. I couldn't find them at the grocery stores around me. Now, it's my mission to find some and have an old-school beef kidney dinner like we both enjoyed when we were kids.
My great-grandmother was Jamaican and she used to prepare this for my grand uncle from time to time. She showed me how to make this when I was a kid and that was the first time I actually heard of this dish and tried it as well. She would cut the kidney(s) up into smaller pieces and smothered it in a brown gravy...it was SOOOO GOOD. Right now I'm working on increasing my confidence in the kitchen and this is a dish I'm going to try...THANKS MS. CHRIS!!!
Yess!!! Making some in a few,,just finished cleaning and cutting them up. My Grandma, and my Mommy used to cook these . They did it a little different because back in the day, I don't remember Grandma using onion powder, or garlic powder,,just Salt and Pepper.. I don't remember her browning them, just putting in the pot with the onions, s&p, and then pot them down until they are tender. Then they would add some flour with a little water, to make the gravy. When the pot was done, the gravy was a Gray kinda color, and sooo delish.
I hadn’t had this since the late 90’s. My mom used to make it. I was telling her I missed it so she saw it one day & bought a pack for her & a pack for me. She made hers smothered with gravy & rice & it was just like I remember. 😋 I’m craving it again so I have mine defrosting now. I’m gonna do mine how I make my liver with onions and gravy (Just like your video). Might eat it with grits and eggs this morning. Then later on tonight I’ll have it with rice. When I fixed them for myself, that's what I hated most. I used to wind up with really small pieces. I'm looking forward to trying your way. Keep cooking!
Heyyyy NOW that's what I'm talking about. That was a childhood favorite next to Pinto beans and rice. You're right this is an old skool dish. We used a large brown paper bag to flour chicken when I was growing up. Plastic bags weren't out then. Love the channel and thank you for creating it.

Nothing got thrown away! I remember not caring for the smell so I wouldn't eat them lol. I normally wasn't allowed to get away with that, but for some reason Nanny didn't make me eat them lol. I enjoy your videos. They really take me back.😊

I'm 69 - mom made this very much the same, over rice. Hint: rSlowly mix liquid into powder (eg flour) to mix easier than trying to put the powder stirred into liquid. Hot/warm liquid dissolves stuff best usually.
We used to live by a dairy farm and sometimes the cows would die and we would get some choice parts including kidneys and tongue. My mom would put them in a steak and kidney pie, Yum! And I made beef tongue when my kids were young. I can no longer find either in my grocery store. I asked and they said they could special order them for me at $24.00 per pound. Out of my league now!
OK how do I even start. I'm a 67 year old white guy. Well I say white but my great great grandfather was black. And we have had Mexican roots through our family and black roots throughout our family my wife's great great grandfather was a slave so you know what It's some point in time I don't know what it really is but maybe these old black roots come out in some way even though I look like a d*** snowflake. I just want to say this look so good I have eaten kidneys from wild animals before we deer hunt we hug hunt we eat raccoon we get possum we eat beaver all kinds of things we can trap and hunt I just wish I could find some modern day black people People that would really embrace the old time and the old school cooking how it was 75A 100 a 150 years ago. I wish white people would embrace this wonderful wonderful culture of food. Ok I just cleaned it. Tons more work for an inexperienced cook. I envy those who have moms, grandmothers and great-grandmothers to do this for them. I will cook it tomorrow. Wish me luck.
So I soaked it overnight in water and the only vinegar I had, balsamic. Since I am mainly carnivore, I drained it, put it with some olive oil in a crockpot and let it cook for hours. It made a lot of juice. It was good. Will make it again. Made broth for my dogs with the parts I cut out. Threw out the solids.

Chris I had to a double take on the title of this video. I haven't heard anyone cooking beef kidneys since I was young. I am 69 y/o now and didn't like them, but my cousin did and she just fry and eat them. This recipe bring back so many memories.
Kidneys and rice have been in our family for years and years and years my children love them my grandchildren love them we just cook the beef kidneys with onions . fry them until tender like lots of butter in them and then we add rice once they're done. we put cooked rice right with the kidneys and onions and mix it all up in that buttery kidney juice
My sister used to fry the best chicken livers ever. They were delicious. I do like beef livers also. I remember hearing my family talk about kidneys. But I'm sure I've never eaten them. I am 36 and norvegian. I've been making stuff like this since my teens. I've made pigs kidneys abfew times. But for some reason I jqve not rryed cows kidney. I think itbis hard to find. I love both cow and pigs liver. Sheep, not so much. I used to boil broth from marrow bones when I moves for myself at 15. Bones are so expensive these days... I really wanna try this recipe. My Daddy makes kidneys about 1 or 2 times per month. He cooks it with rice, and bacon with the rind on it. Sooooo good.

Many years ago, my Aunt made steak & kidney pie.My grandfather had butchered a cow & gave her the kidneys, I remember her cleaning those kidneys a long time. As a child, I didn’t try it but the adults ate it & enjoyed it ! Do you n me she steak & kidney pie?
