for those of us that live in northern climates, take a bunch of lemons and squeeze into a strainer then portion into ice cube trays then freeze and store in a zip lock

Let me research that for you. I'm so lucky to be my dad's daughter and get a portion of his yearly share directly from Crete!! I cherish that and use it carefully. It's expensive stuff. Believe me. I know, because I still have to purchase it when I run out. The good thing is, that I only use it for salads, dipping bread and anything that doesn't involve adding heat or cooking as that changes the flavor and properties. I don't even need to look at the recipe because it's so easy to make I could just grab lemon olive oil salt and mix it up all together that's just my way of doing it I don't have black pepper because my mom's allergic to black pepper!!

Because it's healthier. Soy oil tastes great, canola taste good too. But the better EVO's do taste a little bitter because the polyphenol content is much higher and the oil is not old and oxidized. Otherwise what's the point of using olive oil?

Yes I marinade chicken & potatoes using this recipe although I also add dried rosemary (dried is better than fresh) too
I always liked it fresh, in every experience I had it dried, the texture was just wrong and it always poked at my gums.
