Princess garden in Kansas city has vegan.
They serve meat too, I'm saying they have vegan options. and vegetarian. to be honest it's the only place I know of that serves vegetarian Chinese food and is half decent flavor, me I'll eat both, though I hate tofu .

It is false that “ALL” Chinese restaurants in the US have a Chinese menu. Only restaurants catering to Chinese clientele will have a Chinese menu and they may specialize in a specific cuisine (Sichuan, Xi’an, Cantonese). However, it doesn’t hurt to ask but don’t be an asshole when they say they don’t have one.
Very few restaurants in northeast US have such "secret menu," but independent places in particular will usually cook what you ask for. Four out of five we've tried tend to enjoy cooking more-authentic. Leaving the right gratuity means we get treated well next time too.
I'm able to get "secret stash" hot oil. Not hot sauce, but genuine, home-made hot oil from a local place. I can order "off menu," and eat what the staff eats. Maybe it's because I speak a little Chinese, or that I can play mahjong at Honk Kong street game speeds, but it is a completely different experience.
Does anyone have experiences with this specifically in the South East? I want to ask but I'm not sure if a Chinese secret menu is as much of a thing here. I only know of one Mexican restraunt that had a secret menu and the waitress legit rolled her eyes at me when I asked for one as well. I asked politely in Spanish too lol
Instead of asking for a "secret menu" ... research for a dish that would be in that secret menu and ask if they have that dish. If they have it, then you could ask what else they have. Also, if they are good at it, people will talk about it and post it online. as someone who works at a Chinese restaurant I can safely say that we do not have a “secret menu”. seldom do we get Chinese customers, but when we do they always order “American” Chinese food. that being said, everything in our restaurant is made fresh, i can’t speak for other restaurants but we can modify any dish. though it technically isn’t a dish we can tell the chefs to add chicken to the flat rice noodles and/or whatever else a customer wants. so just keep in mind that even if a restaurant doesn’t have a secret menu you can always ask to modify a dish to get an “authentic” Chinese one.
(also in case anyone wanted to know, most of the time the employees don’t eat the “American” Chinese food and they make authentic food instead. so even if you don’t see Chinese customers, the employees most likely are cooking themselves authentic food which means they have the ingredients in the kitchen to make something for you! but coming from someone who has dealt with their fair share of rude customers, please always be nice to the waiters/who ever answers the phone! and if they tell you they can not modify something, please do not argue with them.)
I tired of trying to order custom dishes at the places around here in Germany because there seems to be such a high chance with Asia places of getting things wrong. Hell, some can't even make a somewhat logically structured menu. My favorite place (that was still frustrating to deal with) closed down and then I found one place that had appealing food which seemed kinda fresh and natural and authentic, but they had appalling service and put the same veggies in every meal, which of course didn't match their menu, but that was clumsily copied from another restaurant anyway. Then I discovered a place offering healthy, organic local food, but that had summer vacation and then closed indefinitely for personal reasons.

I think as a general rule, never be rude to the person you're ordering from on the phone. That's how you end up with spit in your food. (I'm totally joking about the spit, mostly, -ish, but seriously, they deal with enough belligerence on a daily basis, no need to add to it)
I work at a Chinese restaurant as well. What we eat for breakfast and lunch is definitely not on the menu. We have tons of vegetables and meats that are not served to customers. Anyone who asked for a traditional Cantonese meal could get one. 冬瓜湯,白切雞,鳯爪, we got it son...

The good places list the Chinese dishes along with the westernized "chinese" food (which usually means they get a decent Chinese clientele), much like a proper Japanese place doesn't limit itself to sushi only... then there are the ones that carry a secret menu, and then there are the complete charlatans...
Sadly Chinese aren't the only nationality that hide excellent food. Many middle-eastern places in my area do it too... usually by selling pizza instead of actual food :(
it's sad really, i'd give an arm and a leg for an actual Turkish-owned place that actually serves Turkish food and not just pizza (and isn't located in Bazar Vest in århus) :D

This is so true. My mom will walk into places we never even been to before and request something not on the menu. Except she doesn’t use English. It made me feel like it was some kind of secret club member thing, known only to other Chinese immigrants, lol.

I've walked into a Malaysian restaurant, and asked if they can make Assam Laksa.
They did, and the most surprising thing is, there was nothing on their menu with Mackerel, so I totally expected them to say it's impossible.

This is a bit misleading. I'm from the Endicott, NY area and Moon Star is not your typical American Chinese takeout or a Chinese buffet (like the clips you showed). Those clips of the buffet Chinese food aren't even from their restaurant. They serve very authentic, high-quality Chinese food. All these alternatives you're trying are on their regular menu, not some secret menu. The book the owner was holding at the end is the menu everyone gets and it has everything you guys tried.
I doubt you can get this quality if you went to your average American Chinese takeout.
Yup, I live in the area as well. I agree that this video is misleading. Moon star is not a Chinese take out place or a Chinese buffet. (I thought I was going crazy when I saw the shots of the buffet dishes. Has it been that long since I last went there) There’s no secret menu. It’s the regular menu that everyone gets. There are authentic Chinese restaurants in the US you know. This is one of them.

Maybe I grew up in a different region, but egg drop soup is not that rare in China. It may contain different ingredients, and it generally has a thinner consistency than most common Western variants.

Sometimes they even put a Chinese-only menu on the wall, filled with Chinese favorites that non-Chinese would be unlikely to order.
You know what, as a translator I can understand, most of Chinese dishes are notoriously difficult to translate, some that might be written in 3 Chinese characters need to be translated into half a paragraph in English. Most restaurants don't have either the capacity to translate themselves, or the money to hire a translator. I mean, I charge 20 cents per words, but imagine would charge at least 50 for menu...
A Chinese restaurant here in Plano Texas was recently busted for having a secret menu that included Shark Fin Soup. Despite the owner getting arrested the restaurant remains open.

Shark Fin soup is illegal for a reason, they tend to catch the shark, hack their dorsal fin off then dump the still live shark back in the water to either bleed or starve to death as it can no longer swim.

Sometimes people get too obsessed with eating "authentic" food. I lived in China for 3 years, Japan for 4 years, Korean for 3 years and various parts of Europe and NA and South/South East Asia for the other 25 years but I still frequently crave an "American" Chinese hot & sour soup (and I have almost definitely eaten many more "interesting" foods than laowhy86). Just because it is authentic doesn't mean it is better. Be happy with the food that makes you comfortable.
If you like egg rolls and egg drop soup then eat that. American Chinese food also has a very rich tradition behind it that a lot of people these days try to dismiss.
That's fine, and I do love American style hot and sour soup. But for the other things I really want to try authentic. Much of the American Chinese adaptations are way too sugary!
I just try to use local ingredients with """authentic""" methods of preparation and spices. I agree, however: eat what you want, it comes out the same way regardless :)

It's interesting that YueXing had a printed authentic menu. My experience has been that the menu is usually hand-written on posterboard and taped to the wall.
While you were in China, did you go to that restaurant "Fortune Cookie" in Shanghai? It is a restaurant serving American Chinese food (I assume high-quality) in China.

Thanks for the suggestions! My wife used to work for a well-known Chinese executive in San Diego and would participate in functions, so she knows where he would get his authentic food in Kearney Mesa - the hub for authentic Asian food in the city. He would always call ahead to place his order. I occasionally would get to try some and it was great. Now we'll see if we can try it for ourselves instead of the usual faux-Chinese food we're used to. Merry Christmas!

Also it seems odd that the host says she wants more Americans to try real Chinese food, yet the real Chinese menu is a secret. Why not give customers both menus and then more of us would try it? I certainly would!
I agree! I am married to a woman who grew up in Laos she loves to cook! as we work together and eat lunch together, its amazing how many people want to try her authentic food and just love it.
Don't know much about America, I live in Australia, and agree with Perfect Irony on his assessment (with respect to Australia though). I think we've probably progressed a little more here in Australia, though I'm unfortunately a poor representation of an average Australian, since I'm so involved in the Chinese community here (Chinese wife).
I will say that here in Melbourne, where I live, there is a Chinese restaurant near my house, which we wont go to because we know it serves western style Chinese food. My wife asked the boss one day, and he told her she wouldn't like the food! However, one suburb closer to the city, and we can find authentic dishes, and things get better the closer you get to the city (and as the Chinese population increases).
The place we live is on the outskirts of Melbourne - literally a 2 minute drive before you see farmland.
merinsan i here you, I have visited China a few times now but live about 45mins from the city of Perth. Since my travels to China I find it very hard to find a Chinese restaurant that I enjoy eating at. I have been to a few in Canberra with mates, found the food a little better and cheaper then what we can get in Perth but still not the same as what I have eaten in China.

Here in Melbourne, there are a lot of options, especially in areas with large Chinese populations, like Box Hill and Glen Waverly. City is also good.
Having Chinese friends helps a lot too, since they share information about good restaurants on wechat. Although having said that, the last place we went to was terrible, but my friend said it depends on the chef for the day, so maybe we had the bad chef.
I desperately want to go back to China. Haven't been for a few years now. Just really difficult for us at the moment since my son is in his final year of high school.

Hot and sour soup (酸辣湯) is easy to find in Taiwan.
Well, not every chinese restaurant, but that's to be expected. My family is in the chinese (american) restaurant business and you certainly CANNOT get some of these options. This Secret menu applies to the "mixed" restaurants, where both Americans and immigrants frequent. The Chinese American restaurants my family and some others operate strictly cater to Americans so we stock for your conventional Chinese takeout dishes. So while you can ask for Lotus root and he fun, we either don't have enough (meant for our own meals) or not at all because we simply don't utilize the more exotic ingredients for the restaurant's Mongolian beef and whatnot. While we do get the occasional Asian American coming into the takeout place for real chinese food, the restaurant has to make do with broccoli and lomein to mimic some of that authentic flavor, to varying degrees of success.
Don't be discouraged on your hunt for the secret menu! But your neighborhood See through or Mandarin Garden might not also cater to the chinese community but is instead strictly American, and therfore not carry some of the more Chinese ingredients.
It's always a good idea to ask, and even if they don't have the pancakes and whatnot, they might whip something else up with what they have!

I am glad you posted this. I did the same thing with Indian food when I was in Iraq. The mess halls are mostly run by civilian contractors from India. So you are mostly eating their version of American food. Which mostly sucked because they never really had it before. They let me try what the make for them selves. 1000 times better.

I just found your channel this morning. I found it very enlightening and special because I'm an adventurous eater and I am going somewhere today that I am going out to eat. I will make my way to the local Chinese restaurant in Dubois Pennsylvania and have a blast eating real Chinese food instead of Chinese food made for Americans.
