Ingredients:
For the crust:
240g (8.5oz) chocolate biscuits/graham crackers
7 tablespoons (100g) butter, melted
For the filling:
325g (11.5oz) dark chocolate 60%
3 cups (675g) cream cheese
1 cup (220g) sour cream
2 tablespoons (15g) cocoa powder
1 teaspoon vanilla extract
1¼ cups (250g) sugar
4 eggs
1/4 teaspoon salt
For the ganache:
150g (5.3oz) dark chocolate 60% (or milk chocolate)
2/3 cup (160ml) heavy cream
1 tablespoon (15g) butter
Directions:
1. Preheat oven to 320F (160C).
2. In a food processor, process biscuits until crumbs are formed. Add melted butter and process again until combined. press into bottom of 9-inch (23 cm) springform pan. Bake for 10 minutes. Let cool while making the filling.
3. Filling: chop the chocolate and place in a heat proof bowl. set over pot with simmering water and melt completely (you can do this step in the microwave: 20 seconds pulses until melted). Set aside.
4. In a large bowl beat cream cheese, sugar, salt and vanilla extract, beat until smooth. And sour cream and beat again until smooth. Add cocoa powder and beat again, scrape the sides of the bowl if needed.
5. Add the eggs, one at the time, beating to combine after each one. add the melted chocolate, mix until combined and smooth.
6. Wrap the bottom of the pan with aluminum foil. Pour the filling over the crust. place in a roasting pan. Place roasting pan in oven. Pour in boiling water to come halfway up side of springform pan
7. Bake for 55-60 minutes, or until center is almost set. Turn off the oven, slightly open the oven door, and allow the cake to cool in the oven for 1 hour. Remove from oven, run a thin knife around the edge of the pan, let cool to room temperature and refrigerate overnight.
8. For the ganache: chop the chocolate, place in a large bowl. In a saucepan bring the heavy cream to a simmer. Pour over the chocolate. Let sit for 1-2 minutes. Stir until smooth. Let cool slightly.
9. Pour over the cheesecake, let set and serve.

This is my first time baking anything and the cheesecake came out amazing! It felt jiggly after an hour so I left it in the oven for another hour. I substituted cream cheese for full fat soft cheese. And in Ireland we don’t have heavy cream so I used double cream and it worked just fine! Thank you for the recipe ❤

This was the best chocolate cheesecake I’ve ever eaten! I used normal crackers instead of chocolate ones and added chocolate whipped cream to the main mixture. It wasn’t ready even in 60 mins, had to leave it in the oven for 2 hours. Still it was very creamy and fluffy!! Soo good!
I have the same problem...60 min and 8s still creamy but very fluffy. But I think it will be the best I ever eat! I tried a bit 🙃!

FYI... I made this cake and it was fantastic!!!! Hands down the BEST baked cheese cake recipe EVER!!! I will be tweaking it and trying to make a white chocolate one with strawberries... Or a plain one. Also I tasted the batter before adding the raw egg and I think it would make a great NO BAKE cheese cake too! Guarding this recipe with my life!

Thank you for the recipe! It came out Great! Not quite as pretty as your, but tasted delicious! I added a little bit of lemon shavings and about 1 tablespoon flour. Mine tasted like a chocolate malt...:-). Everyone said it was the best cheesecake they ever tasted...:-) Thanks again...:-). And if you would like my recipe for stuffed cabbage, just ask...:-)

اولا لطبقة البسكوت اطحن 240 جرام من بسكوت الشكولاتة
ثم اضف له اصبع زبدة (100جرام )
واخلط جيدا وضعه خليط البسكوت والزبدة في صينية ذات قاع متحرك وافردها بالصينية مع الضغط واخبزها في الفرن مدة 10 -12 دقيقة ثم اخرجها وغلفها من تحت الألومنيوم بعد ان بردت وارفع حواف التغليفة قليلا حتى لا يتسرب لها الماء حين وضعها بالفرن مع الحشو.
ثانيا مواد الحشوة :
325 جرام شكولاتة سوداء
3اكواب اي ما يعادل 675 جرام من الجبن الكريمي مثل فيلادلفيا
كوب من السور كريم اي ما يعادل 220 جرام
ملعقتين طعام اي ما يعادل 15 جرام من بودرة الكاكاو
ملعقة طعام سائل الفانيليا
كوب وربع سكر اي ما يعادل 250 جرام
اربع بيضات
وربع ملعقة صغيرة ملح
ثالثا الجناش :
150 جرام شكولاتة سوداء او شكولاتة بالحليب
160 مل كريمة خفق سائلة
ملعقة طعام زبدة اي مايعادل 15 جرام .
الحشوة :
اولا نذيب الشكولاتة السوداء على حمام بخاري بحيث ان الماء لا يلامس الزبدية المعدنية او الزجاجية التي ستذيب بها الشكولاتة ويترك جانبا لتهدأ حرارته
ثانيا يخلط الجبن كريمي مثل فيلادلفيا او اي جبن كريمي مع السكر العادي ليس خشنا وليس بودرة والفانيليا والملح
ثم نضيف السور كريم (وهو مابين القشطة والزبادي او القشطة واللبنة ) ومن الممكن استبداله اما بقشطة لوحدها في حال غير متوفر السور كريم او الزبادي او لبنة ثم نضيف الكاكاو البودرة
ثم نضيف البيض بيضة بيضة نخلط ما بين كل اضافة
ثم نضيف الشكولاتة السوداء الذائبة بعد ان هدأت حرارتها وتقلب بملعقة من فوق الى تحت نضع خليط الحشو على البسكوت المخبوز ونرجها حتى يتساوى السطح ونضع الصينية المغلفة بالألمنيوم في صينية اخرى ونصب عليها ماء حار حتى منتصف الصينية المغلفة وانتبه من دخول الماء داخل الألمنيوم وتخبز غي فرن حرارته 160° مدة ساعة او 50 دقيقة بعد مرور الوقت افتح باب الفرن قليلا واتركها في الفرن مدة ساعة اخرى ثم اخرجها وحرر الجوانب بسكين رفيع واتركها تبرد في حرارة الغرفة ثم بعد ذلك انقلها للثلاجة مدو يوم كامل حتى تبرد وتتماسك تماما
اخرج التشيز كيك بالشكولاتة من الصينية وضعها في طبق التقديم وصب عليها الجناش .
طريقة الجانش :
نضع الكريمة في قدر صغير مع الزبدة ويسخن الجميع وتظهر الفقاعات في اطراف القدر يرفع ويصب على الشكولاتة السوداء او شكولاتة بالحليب ويترك لدقيقتين ثم يخلط المزيج جيدا حتى يتكاثف ويصب على التشيز كيك ويساوى السطح بملعقة التمليس ويقدم بالعافية.
