Pickled Rosemary Onions

  • Pickled red onions are one of my favorite things to have on hand. I love adding them to salads and other savory dishes. This is a great recipe to help preserve your red onions so they don't get soft and go to waste. Get creative with the herbs you add. I always love adding garlic and rosemary, but other combinations can work too!
    Ingredients:
    2 Rosemary Sprigs
    1 Red Onion, sliced
    3 Garlic Cloves
    1 cup White Vinegar
    ½ cup Apple Cider Vinegar
    ½ cup Water
    1 tbsp. Salt
    1 tsp. Peppercorns
    1 Tbsp. Honey
    Instructions:
    1. Add rosemary, red onions, and garlic into a mason jar.
    2. Mix vinegars, water, salt, peppercorns and honey into a sauce pan on high heat. Stir for a few minutes (until salt dissolves).
    3. Pour liquid mixture into mason jar and seal the lid. Let cool on counter and then place in refrigerator for up to 3 weeks. Enjoy the pickled onions on your favorite dishes!
